Chicken Curry Soup With Coconut And Lime Recipe

Ingredients

  • 1 can Low-salt chicken broth, (14 1/2-oz)
  • 1 can Unsweetened coconut lowfat milk, (13 1/2- to 14-oz)
  • 1/2 Tbsp. Curry pwdr
  • 1 x Jalapeno chili, seeded, chopped
  • 4 x Boneless skinless chicken breast halves, cut into 3/4-inch pcs
  • 2 Tbsp. Fresh lime juice
  • 1/4 c. Minced green onion
  • 1/4 c. Minced fresh cilantro
  • 1 c. Freshly cooked white rice Lime wedges

Directions

  1. Bring chicken broth, coconut lowfat milk, curry pwdr and chili to simmer in heavy medium saucepan over medium heat. Add in chicken and simmer till chicken is just cooked through, stirring occasionally, about 5 min. Fold in lime juice.
  2. Season with salt and pepper.
  3. Transfer soup to bowl. Sprinkle green onion and cilantro over. Spoon rice into each bowl. Ladle soup over. Serve, passing lime wedges separately.
  4. Serves 4.
