Ingredients

  • 3 tbsp vegetable oil
  • 1 cinnamon stick
  • 2 star anise
  • 1 sprig curry leaves, stem removed
  • 1½ lbs (675g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 3 medium potatoes, peeled and cubed
  • ½ cup (120ml) coconut milk
  • Salt to taste
  • Spice Paste
  • 5 to 6 shallots or 1 large onion, peeled and cut into small pieces
  • 3 cloves garlic, peeled and halved
  • 1 inch ginger, peeled and cut into pieces
  • 3 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground fennel
  • 1 tsp chili powder (optional)
