I made this last night. I agree that it was pretty rich. I added more chicken broth and only the velveeta. Chunks of tomato and avocado on top. But the flavor of the salsa was a great idea. I will make it again, a winter favorite!I've cooked/tasted this recipe!This is a variation
%20and%20watch%20a%20t.v.%20marathon%20of%20our%20favorite%20shows%20with%20my%20mother-in-law.%20It%20was%20another%20late%20night%20followed%20by%20the%20usual%20busy%20Monday%20morning%20of%20my%20weekly%20parenting%20group%20meeting,%20a%20trip%20to%20the%20library,%20and%20back%20to%20the%20pre-school%20to%20pick%20up%20my%20daughter.%20Next,%20there%20was%20a%20goodbye%20lunch%20with%20my%20departing%20in-laws%20and%20the%20kiddos,%20and%20finally%20my%20daughter's%20evening%20dance%20class.%20I%20was%20completely%20ready%20to%20just%20stay%20in,%20relax,%20and%20make%20this%20easy%20and%20delicious%20soup%20by%20the%20time%20that%20my%20birthday%20rolled%20around%20on%20Tuesday.%20I%20was%20beat!%20My%20husband%20kept%20calling%20from%20work%20to%20ask%20if%20I%20was%20sure%20and%20telling%20me%20to%20pick%20where%20I%20wanted%20to%20go%20for%20dinner.%20I%20held%20my%20ground.%20I%20was%20tired%20after%20all%20of%20the%20weekend%20festivities%20and%20a%20busy%20Monday.%20I%20didn't%20want%20to%20get%20dressed%20to%20go%20out.(Confession:%20I%20didn't%20want%20to%20shower%20and%20relinquish%20my%20sweat%20pants)%20I%20wanted%20to%20%22chill%22.%20So%20that's%20what%20we%20did.%20I%20made%20soup.%20Really,%20really%20good%20soup.%20And%20of%20course%20there%20was%20a%20cake.%20And%20candles.%20And%20singing.%20My%20kids%20love%20that%20part.%3C/p%3E%3Cp%3EThis%20recipe%20is%20based%20on%20a%20recipe%20that%20I%20found%20on%20Tasty%20Kitchen%20called%20Cheesy%20Chicken%20Tortilla%20Soup.%20Here's%20how%20it%20came%20together.%3C/p%3E%3Cp%3EFirst,%20cook%20the%20chicken.%20You%20can%20actually%20cook%20the%20chicken%20in%20a%20skillet%20with%20the%20taco%20seasoning.%20However,%20I%20was%20preparing%20a%20large%20amount%20of%20chicken%20(some%20for%20this%20recipe,%20some%20to%20freeze%20for%20a%20later%20date)%20so%20I%20just%20tossed%20the%20diced%20chicken%20with%20a%20packet%20of%20taco%20seasoning.%3C/p%3E%3Cp%3EMelt%201/4%20cup%20of%20butter%20in%20your%20soup%20pot%20and%20toss%20in%201/2%20cup%20of%20onion.%20Cook%20until%20the%20onion%20is%20tender.%20Note:%20If%20you%20wanted%20to%20make%20this%20soup%20lighter%20you%20could%20cut%20the%20butter%20in%20half%20or%20even%20cut%20out%20the%20butter%20completely%20and%20spray%20your%20soup%20pot%20with%20a%20little%20nonstick%20cooking%20spray.%3C/p%3E%3Cp%3EStir%201/3%20cup%20of%20flour%20into%20those%20onions.%3C/p%3E%3Cp%3EWhisk%20in%202%201/2%20cups%20of%20broth%20and%20bring%20it%20to%20a%20boil.%20Cook%20until%20thickened.%20I%20ended%20up%20using%20vegetable%20broth%20here%20because%20I%20had%20an%20open%20box%20in%20my%20fridge,%20leftover%20from%20the%20African%20Sweet%20Potato%20Stew%20that%20I%20made%20earlier%20this%20week.%3C/p%3E%3Cp%3EAdd%20in%20the%20cubed%20Velveeta,%20shredded%20Jack%20cheese,%20and%20salsa.%20The%20original%20recipe%20called%20for%201/3%20cup%20of%20canned,%20diced%20tomatoes%20and%201/3%20cup%20of%20salsa.%20It%20occurred%20to%20me%20that%20salsa%20has%20diced%20tomatoes%20in%20it%20and%20it's%20more%20flavorful%20than%20plain%20diced%20tomatoes%20anyway.%20So,%20I%20began%20with%202/3%20cup%20of%20salsa.%20This%20soup%20was%20so%20thick%20and%20I%20love%20my%20homemade%20salsa%20so%20much%20that%20I%20ended%20up%20pouring%20the%20whole%20jar%20of%20salsa%20into%20the%20soup%20pot.%3C/p%3E%3Cp%3EOnce%20the%20cheese%20is%20melted,%20stir%20in%20the%20chicken.%20I%20stirred%20my%20for%20a%20minute%20or%20two,%20until%20the%20taco%20seasoning%20was%20sufficiently%20incorporated%20into%20the%20soup.%3C/p%3E%3Cp%3ENow%20stir%20in%20a%20cup%20of%20half%20and%20half.%20The%20original%20recipe%20called%20for%20heavy%20cream.%20I%20lightened%20it%20up%20a%20bit%20with%20the%20half%20and%20half.%20If%20you%20really%20want%20to%20cut%20the%20fat%20in%20this%20recipe,%20go%20ahead%20and%20use%20skim%20milk.%3C/p%3E%3Cp%3EThis%20is%20such%20an%20easy%20soup%20to%20make%20and%20SO%20tasty!%20With%20a%20sprinkle%20of%20green%20onions,%20a%20dollop%20of%20sour%20cream,%20and%20a%20handful%20of%20Fritos,%20it%20was%20a%20wonderful%20meal%20for%20a%20cold%20February%20night!%3C/p%3E%3Cp%3EHere's%20the%20perfect%20first%20bite...%3C/p%3E%3Cp%3EHonestly,%20I%20wasn't%20the%20only%20fan%20of%20this%20soup.%20I%20packaged%20the%20leftovers%20last%20night%20and%20my%20husband%20took%20them%20to%20work%20this%20morning.%20My%20phone%20beeped%20with%20this%20late%20morning%20text%20from%20him:%20Soup%20soooo%20good%20I'm%20on%20second%20helping%20today-will%20have%20eaten%20it%20all%20by%2011%20am--high%20in%20calories?%20(He%20often%20leaves%20for%20work%20at%205%20am%20and%20skips%20breakfast,%20eating%20his%20%22lunch%22%20in%20the%20morning).%3C/p%3E%3Cp%3EUh-oh.%20We're%20trying%20to%20be%20more%20health%20conscious.%20I%20had%20to%20own%20up%20and%20let%20him%20know.%20Oh%20well,%20next%20time%20I'll%20make%20it%20even%20lighter.%20And%20there%20WILL%20be%20a%20next%20time.%20This%20recipe%20gets%20two%20thumbs%20up%20from%20my%2
