Ingredients
- 1 can Hunt's traditional sauce - (27.5 ounce)
- 4 ounce Fresh mushrooms sliced
- 3/4 lb Catfish filets washed, seasoned
- 3 Tbsp. All-purpose flour
- 2 Tbsp. Veg. oil
- 1 Tbsp. Butter
- 1 sm Onion finely minced
- 3 x Green onions minced
- 1 x Celery stalk finely minced
- 1/4 c. Minced bell pepper
- 1 tsp Fresh parsley (or possibly 1/2 tsp. dry parsley)
- 1 Tbsp. Worcestershire sauce
- 1/4 tsp Garlic pwdr
- 1/4 tsp Sugar
- 1/4 tsp Fresh lemon rind pcs to 1/2 tspn
- 2 c. Water
- 3 c. Rice or possibly noodles cooked
Directions
- Cook flour, oil and butter as roux to beer-bottle-brown stage. Stir fresh vegetables into roux. Cook approximately 5 min, stirring often, then add in the Hunt's traditional sauce, water, and rest of ingredients, except fish. Cook for about 30 min, then drop in the filets and cook for another 10 min. Serve over cooked rice or possibly pasta.
