Carrageen Moss Cream Recipe

Ingredients

  • 1/2 ounce Dry carrageen moss
  • 17 fl ounce Lowfat milk
  • 1 x Vanilla pod, split
  • 1 x Orange, peel stripes only
  • 2 ounce Sugar
  • 2 x Large eggs, separated

Directions

  1. 1 Wash the carrageen in hot water and soak for 5-10 min. Place in a pan with the lowfat milk, vanilla pod and a few stripes of orange peel.
  2. 2 Boil and simmer gently for 15-20 min. Pass the lowfat milk through a fine mesh strainer, extracting all the gelatine from the carrageen.
  3. Whilst the liquid is still warm, whisk in the egg yolks and sugar.
  4. Cold slightly.
  5. 3 Stiffly whisk the egg whites and fold into the mix. Spoon into one large or possibly individual small moulds and refrigeratefor at least 4-6 hrs.
