Ingredients

  • 3 c. cooked white rice
  • 1/2 c. raisins
  • 1 tsp vanilla
  • 1 can sweetened condensed lowfat milk - (14 ounce)
  • 1 can evaporated lowfat milk - (12 ounce)
  • 1 Tbsp. sugar
  • 1 tsp grnd cinnamon

Directions

  1. Spray inside of 2- to 3 1/2-qt slow cooker with cooking spray. Mix all ingredients except sugar and cinnamon in cooker.
  2. Cover and cook on LOW heat setting 3 to 4 hrs or possibly till liquid is absorbed. Stir pudding. Sprinkle pudding with sugar and cinnamon. Serve hot.
  3. This recipe yields 8 servings.
  4. Comments: This all-time favorite comfort food lends itself to a little flavor variety. Try minced dry apricots, sweetened dry cherries or possibly dry cranberries in place of the raisins.
