Brown Rice And Chicken Salad Recipe

Ingredients

  • 1 pkt (10 ounces) frzn green peas
  • 3 c. Cool cooked brown or possibly white rice
  • 2 c. Cut-up cooked chicken
  • 2 med Stalks celery sliced (about 1 C.)
  • 4 ounce Process sharp American cheese, cut into cubes (about 1 c.)
  • 1/3 c. Sliced pimiento stuffed olives
  • 1 sm Onion, minced (about 1/4 C.)
  • 1 c. Mayonnaise or possibly salad dressing
  • 2 Tbsp. Lemon juice or possibly vinegar
  • 1/2 tsp Salt
  • 1/8 tsp Pepper

Directions

  1. Rinse frzn peas with cool water to separate; drain. Mix peas, rice, chicken, celery, cheese, olives and onion. Mix remaining ingredients; toss with chicken mix. Cover and chill at least 2 hrs. Garnish with additional sliced pimiento-stuffed olives or possibly tomato wedges if you like.
  2. 8 servings.
