  1. Peel and slice the broccoli diagonally. Heat 3 Tbsp. oil in wok over a high heat. Add in broccoli and 1 tsp. salt, stirring constantly till the broccoli turns dark green. Remove to a boil. Heat remaining 1 Tbsp. oil in the same wok. Stir in bamboo shoots and mushrooms, then add in salt, sugar, and mix well; serve.
  2. Separate broccoli stems from flowerettes.
