Ingredients
- 1 cup warm water
- 3 tablespoons milk
- 2 teaspoons active dry yeast (about 1 envelope)
- 2 tablespoons sugar

.%3C/p%3E%3Cp%3EWho's%20with%20me?!!!%3C/p%3E%3Cp%3EI%20know%20it's%20just%20a%20sandwich%20and%20technically%20I%20could%20have%20a%20turkey%20sandwhich%20any%20day%20of%20the%20week,%20but%20only%20after%20Thanksgiving%20can%20I%20have%20that%20sandwich%20piled%20with%20turkey,%20layered%20with%20tons%20of%20crisp%20lettuce%20and%20slathered%20with%20cranberry%20sauce%20on%20some%20thick,%20awesome%20bread.%3C/p%3E%3Cp%3E(Well,%20I%20suppose%20I%20could%20also%20have%20cranberry%20sauce%20on%20my%20sandwich%20any%20day%20of%20the%20week,%20too,%20but%20let's%20not%20split%20hairs,%20shall%20we?)%3C/p%3E%3Cp%3ENormally%20I%20buy%20a%20nice%20hearty%20Italian%20bread%20for%20my%20BFTSs%20but%20a%20little%20bit%20of%20fate%20intervened%20this%20year.%20Regular%20readers%20know%20that%20I'm%20cooking%20along%20with%20Alana%20Chernila's%20The%20Homemade%20Pantry:%20101%20Foods%20You%20Can%20Stop%20Buying%20and%20Start%20Making%20as%20part%20of%20the%20From%20Scratch%20Club's%20virtual%20book%20club.%20Our%20latest%20assignment%20involved%20breads%20and%20crackers,%20so%20this%20weekend%20I%20made%20what%20Alana%20calls%20hamburger%20buns.%3C/p%3E%3Cp%3EIt's%20not%20necessarily%20the%20neatest%20recipe%20to%20make...%3C/p%3E%3Cp%3EThese%20buns%20are%20not%20only%20delicious%20but%20gorgeous%20and%20huge%20--%20just%20the%20ticket%20for%20the%20BFTS!...%20but%20it's%20worth%20the%20mess%20when%20you%20see%20the%20result.%20The%20buns%20have%20a%20slightly%20eggy%20flavor%20that%20I%20think%20will%20complement%20the%3C/p%3E%3Cp%3Eturkey-dinner-on-a-bun%20lineup%20quite%20nicely.%20And%20their%20size%20is%20perfect:%3C/p%3E%3Cp%3Ethe%20recipe%20calls%20for%20making%20eight%20buns%20from%20the%20dough,%20which%20results%20in%3C/p%3E%3Cp%3Eenormous%20buns%20(if%20I%20make%20them%20again%20for%20hamburgers,%20I'll%20likely%20make%2010%3C/p%3E%3Cp%3Ebuns%20instead).%3C/p%3E%3Cp%3EAll%20the%20better%20for%20packing%20in%20the%20leftovers.%3C/p%3E%3Cp%3E(Happy%20Thanksgiving%20to%20all%20--%20The%20Ninj%20is%20thankful%20for%20your%20continued%20readership.%20MWAH!)%3C/p%3E%3Cp%3EBlack%20Friday%20Turkey%20Sandwich%20Buns%20(adapted%20from%20The%20Homemade%20Pantry)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20water,%20milk,%20yeast%20and%20sugar%20and%20let%20stand%20until%20slightly%20foamy%20(5%20minutes).%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20mix%20the%20flour%20and%20salt.%20Add%20the%20butter%20pieces%20and,%20using%20your%20hands,%20squeeze%20and%20rub%20the%20butter%20into%20the%20flour.%20Add%20the%20yeast%20mixture%20and%20eggs%20and%20stir%20until%20dough%20starts%20to%20form.%3C/p%3E%3Cp%3EPut%20the%20dough%20on%20a%20floured%20work%20surface%20and%20knead%20it%20hard%20for%2010%20minutes%20(you%20can%20add%20more%20flour%20as%20the%20dough%20gets%20sticky).%20Shape%20the%20dough%20into%20a%20ball%20and%20put%20it%20back%20into%20the%20large%20bowl.%20Cover%20the%20bowl%20with%20plastic%20wrap%20and%20let%20it%20sit%20in%20a%20warm%20place%20(70%20degrees%20worked%20for%20me),%20rising%20until%20it%20has%20doubled%20in%20size%20(2%20hours).%3C/p%3E%3Cp%3ECut%20the%20dough%20into%208%20equal%20pieces%20(for%20hamburgers,%20you%20might%20want%20to%20make%20that%2010%20pieces).%20Shape%20each%20piece%20into%20a%20ball%20and%20place%20the%20balls%20a%20few%20inches%20apart%20(they%20will%20get%20bigger)%20on%20a%20baking%20sheet%20lined%20with%20parchment%20paper.%20Cover%20the%20sheet%20loosely%20with%20a%20dish%20towel%20and%20let%20the%20buns%20rise%20(again,%20in%20a%20warm%20location)%20for%20another%20hour%20or%20two.%3C/p%3E%3Cp%3EPut%20a%20metal%20(not%20glass,%20it%20could%20break)%20full%20of%20water%20on%20the%20floor%20or%20bottom%20rack%20of%20your%20oven%20and%20preheat%20it%20to%20400%20degrees.%3C/p%3E%3Cp%3EMake%20the%20egg%20wash%20and%20brush%20the%20tops%20and%20sides%20of%20the%20buns.%20Place%20the%20baking%20sheet%20in%20the%20oven%20and%20bake%20about%2015%20minutes%20or%20until%20the%20buns%20are%20nicely%20browned,%20turning%20the%20sheet%20halfway%20through.%20Cool%20on%20a%20wire%20rack.%3C/p%3E){kind=link}
