Ingredients
- 1 pound black beans
- 4 cloves garlic, chopped
- 1/4 teaspoon grnd cumin
- 2 quart. water
- 1 bay leaf
- 1 teaspoon oregano
- 3 finely minced med. onions
- 1/2 teaspoon black pepper
- 2 green peppers, cut in strips
- 1 tbsp. salt
Directions
- Wash beans and soak overnight in 2 qts water. Pour beans into 4 qt soup kettle and boil in same soaking water. Cover and cook on medium heat. In skillet, saute/fry onions and green peppers in extra virgin olive oil till light golden brown. Add in crushed oregano, bay leaf, cumin and chopped garlic. Add in to beans, stirring well. Add in salt and pepper and cook slowly till beans are tender. Serve over white rice and top with minced onion. Serves 4.
