  1. In Medium Bowl, Add Meat cover with Flour, Steak seasoning, salt and pepper.
  2. In Large Stock Pot, Cover bottom with Olive oil, Add butter.
  3. Warm slowly, until butter melts.
  4. Add Meat to Stock pot.
  5. Saute over Medium High Heat, until seared (brown).
  6. Add onions
  7. Saute until translucent.
  8. Add all spices.
  9. Combine until spices dispensed well.
  10. Add tomato paste and worcestershire.
  11. Combine.
  12. Add Wine
  13. Stir to deglaze pan. Scrape bottom of pan to lift leftover searings.
  14. Turn down heat to Medium, Simmer, allowing Wine to reduce by half. (about 10 mins)
  15. Add Stock.
  16. Simmer 30 mins. (allowing meat to start to tenderize.)
  17. After 1/2 hour Add remaining Vegetables
  18. .
  19. Simmer One Hour. (minimum)
  20. If time allows this Stew can remain on Medium Low heat for 2 hours.
  21. More time = tender meat.
  22. Taste as you go along. Add salt and pepper to taste.
  23. *Note: If liquid reduces by Half,and Veg are not finished Add Water by 2 Cup increments and lower heat to Med/Low. (Maintain Medium to Medium Low Heat until meat is desired texture and veg are tender)
