Ingredients
- 8 smallish leeks
- olive oil spray
- 1 punnet cherry tomatoes, quartered
- 8 pitted black olives, sliced
- 1 tbsp honey
- juice of 2 lemons
- 1 cup olive oil
- sea salt & freshly ground pepper
- fresh basil leaves
Directions
- Clean and trim the leeks. Then blanch in boiling water until almost cooked. Drain well.
- Spray the leeks with oil and cook on a preheated ridged grill (or BBQ) until well coloured and tender.
- To make the dressing, combine the tomatoes, olives, honey, lemon juice and oil with a little salt and a decent amount of pepper. Taste for seasoning.
- To serve, arrange the leeks on individual plates, spoon the dressing over the top and garnish with basil.
