Ingredients
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 stick (8 tablespoons) unsalted butter
- 1/3 cup sugar
- 1/3 cup light brown sugar
- 1/4 cup unsweetened applesauce
- 1 egg
- 1 1/2 teaspoons vanilla
- 1 large mashed banana
- 1 cup old-fashioned oats (not the quick kind)
- 1 cup toffee bits (or 1/2 cup chocolate chips and 1/2 cup toffee bits)

%3C/p%3E%3Cp%3EBut%20I%20swear,%20if%20I%20see%20one%20more%20picture%20of%20turkey%20or%20sweet%20potatoes%20in%20my%20news%20feed,%20I%20may%20scream.%3C/p%3E%3Cp%3ESo%20today%20I%20share%20with%20you%20a%20very%20unholiday-ish%20cookie%20recipe.%3C/p%3E%3Cp%3EI%20bought%20a%20bag%20of%20too-ripe%20bananas%20at%20the%20store%20the%20other%20day%20(six%20bananas%20for%2019%20cents%20--%20what%20a%20deal!),%20and%20have%20been%20using%20them%20up%20in%20creative%20ways.%20(One%20of%20my%20latest%20faves:%20mash%20up%20a%20banana,%20mix%20it%20with%20a%20bunch%20of%20peanut%20butter%20and%20shmear%20it%20on%20a%20toasted%20waffle%20--%20super%20easy%20breakfast%20to%20go.)%3C/p%3E%3Cp%3EI%20found%20a%20recipe%20for%20banana%20chocolate%20chip%20cookies,%20which%20is%20what%20I%20originally%20intended%20to%20make.%20But%20then%20I%20remembered%20that%20I%20had%20a%20bag%20of%20Heath%20Bar%20chips%20in%20the%20pantry.%3C/p%3E%3Cp%3EYowza.%3C/p%3E%3Cp%3EAnyone%20can%20mix%20bananas%20and%20chocolate%20--%20we%20know%20it's%20a%20good%20combination%20--%20but%20the%20chocolately%20toffee%20is%20out%20of%20this%20world.%20It%20gives%20the%20cookie%20a%20little%20bit%20of%20buttery%20crunch%20while%20keeping%20it%20from%20being%20overly%20sweet.%20I%20also%20made%20a%20batch%20that%20included%20both%20chocolate%20chips%20and%20toffee%20bits;%20it%20was%20good,%20too,%20but%20the%20toffee-only%20batch%20was%20definitely%20superior.%3C/p%3E%3Cp%3E(Tip:%20Carefully%20squeeze%20and%20bruise%20the%20banana%20all%20around%20with%20your%20fingers,%20being%20careful%20not%20to%20split%20the%20peel.%20When%20you%20open%20the%20peel,%20the%20banana%20is%20all%20pre-mashed%20for%20you!)%3C/p%3E%3Cp%3EMaybe%20I%20should%20start%20a%20campaign%20to%20replace%20traditional%20Thanksgiving%20dessert%20pies%20with%20these%20cookies%20instead.%20(Especially%20since%20I%20hate%20pie.)%3C/p%3E%3Cp%3EWho's%20with%20me?%3C/p%3E%3Cp%3EBanana%20Toffee%20Bit%20Cookies%20(adapted%20from%20Lynn's%20Kitchen%20Adventures,%20who%20adapted%20it%20from%20Martha%20Stewart)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20375%20and%20prepare%20your%20baking%20trays%20(I%20line%20mine%20with%20parchment%20paper).%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20first%20four%20ingredients%20and%20set%20it%20aside.%20In%20the%20bowl%20of%20a%20stand%20mixer,%20cream%20together%20the%20butter%20and%20two%20sugars.%20Add%20the%20applesauce,%20egg%20and%20vanilla%20and%20mix%20thoroughly.%20Next,%20add%20the%20banana%20and%20blend%20well.%20Add%20the%20flour%20mixture%20until%20mix%20until%20combined.%20Lastly,%20on%20the%20lowest%20speed,%20mix%20in%20the%20oats%20and%20toffee%20bits.%3C/p%3E%3Cp%3EDrop%20the%20batter%20by%20large%20scoopfuls%20(I%20use%20a%201%201/2%20tablespoon%20dough%20scoop)%20onto%20the%20baking%20trays%20(they%20don't%20spread%20very%20much)%20and%20bake%20for%20about%2012%20minutes,%20until%20golden.%20Cool%20on%20the%20pans%20for%20about%203-4%20minutes,%20then%20place%20cookies%20on%20a%20wire%20rack%20to%20finish%20cooling%20completely.%3C/p%3E){kind=link}
