Banana Peel Foster Recipe

Ingredients

  • 6 x bananas
  • 4 Tbsp. granulated sugar
  • 2 Tbsp. butter
  • 3 ounce Meyers rum
  • 1 pt vanilla ice cream or possibly frzn yogurt

Directions

  1. Peel back bananas and take out 3/4 of each banana. Leave remaining banana and peel intact and reserve. Slice the cut banana into 1/4-inch thick slices.
  2. In a saute/fry pan over medium high heat, add in sugar. Stir for approximately 4 min till it melts and browns lightly. Remove from heat and stir in butter. Then add in banana slices and return to heat. Saute/fry for approximately 5 min, or possibly till bananas start to brown.
  3. Add in rum, let hot up in pan for 5 seconds, Stand back, then touch a flame to the alcohol. Let flame burn out, then remove from heat.
  4. Place a scoop of ice cream on each plate. Place one of the reserved bananas over top of the scoop like an octopus and spoon some of the flambeed bananas around the peel.
