- 7 c. granulated sugar
- 4 T. lemon juice
- 4 T. balsamic vinegar

%20%20%20I%20got%20a%20lot%20of%20pints%20of%20strawberry%20jam.%3C/p%3E%3Cp%3EI%20hate%20to%20make%20the%20same%20old,%20plain%20Jane%20jam,%20so%20during%20my%20canning%20frenzy,%20I%20made%20Strawberry-Lemon%20Marmalade,%20Strawberry%20Balsamic%20and%20Strawberry%20Vanilla%20Jams,%20%20and%20this%20creation:%20%20Balsamic-Basil%20Strawberry%20Jam.%3C/p%3E%3Cp%3EPlace%20crushed%20strawberries,%20sugar,%20and%20lemon%20juice%20in%20a%20large,%20heavy%20pot.%20%20%20(If%20you%20have%20a%20large%20enameled%20Dutch%20oven%20like%20a%20Le%20Creuset%20or%20a%20Staub,%20use%20it.)%20%20%20Bring%20to%20a%20boil,%20stirring%20often,%20until%20sugar%20is%20dissolved.%20%20%20Reduce%20heat%20and%20simmer,%20stirring%20occasionally,%20until%20the%20mixture%20has%20thickened,%20about%2035-40%20minutes.%20%20%20(I%20just%20cook%20until%20%E2%80%9Cjammy.%E2%80%9D%20%20You%20can%20use%20a%20thermometer%20and%20when%20the%20temperature%20reaches%20220%20F.,%20you%E2%80%99re%20done.%20%20%20Or%20you%20can%20use%20the%20freezer%20or%20spoon%20test.)%3C/p%3E%3Cp%3ERemove%20the%20pot%20from%20the%20heat%20and%20skim%20off%20foam%20if%20necessary.%20%20%20Stir%20in%20the%20balsamic%20and%20basil.%3C/p%3E%3Cp%3ELadle%20into%20hot,%20sterilized%20canning%20jars,%20leaving%201/4%20inch%20of%20headspace.%20%20%20Wipe%20rims,%20place%20sterilized%20lids,%20and%20screw%20on%20bands%20finger%20tight.%3C/p%3E%3Cp%3EProcess%20in%20canner%20for%2010%20minutes.%20%20Make%20sure%20boiling%20water%20is%20covering%20jars%20by%201%20inch.%3C/p%3E%3Cp%3EAfter%2010%20minutes,%20carefully%20remove%20the%20jars%20and%20let%20cool%20for%2012%20hours.%3C/p%3E%3Cp%3EGourmet%20Garden%E2%80%99s%20lightly%20dried%20herbs%20are%20perfect%20for%20canning.%20%20%20Even%20though%20I%20grow%20my%20own%20herbs%20during%20the%20summer%20months,%20fresh%20herbs%20tend%20to%20turn%20dark%20and%20slimy%20if%20used%20for%20canning.%3C/p%3E%3Cp%3EImage%20from%20Gourmet%20Gardens%E2%80%99%20website.%3C/p%3E%3Cp%3EThese%20lightly%20dried%20herbs%20will%20not%20turn%20dark%20and%20they%20retain%20more%20flavor%20than%20regular%20dried%20herbs%20that%20can%20be%20found%20in%20the%20spice%20aisle.%20%20I%20use%20the%20basil%20when%20canning%20tomato%20sauce%20and%20I%20use%20the%20cilantro%20for%20canning%20salsa%20and%20jalapeno%20relish.%3C/p%3E%3Cp%3ESegue%20Alert:%3C/p%3E%3Cp%3EJam%20always%20reminds%20me%20of%20hot%20summers.%20%20%20Growing%20up,%20mom%20would%20can%20away%E2%80%A6.jams,%20jellies,%20preserves.%20%20%20She%20would%20also%20can%20peaches,%20pears,%20and%20cherries.%20%20%20%20Using%20her%20hissing%20and%20scary%20pressure%20cooker,%20she%20would%20can%20green%20beans%20and%20other%20non-acidic%20produce.%20%20%20And%20the%20pickles%E2%80%A6.she%20pickled%20a%20lot.%20%20%20What%20I%20remember%20most%20about%20those%20days%20was%20the%20heat.%20%20%20Most%20of%20the%20vegetables%20and%20fruits%20would%20ripen%20during%20the%20hottest%20months,%20July%20and%20August.%20%20%20I%20remember%20many%20a%20day%20sweating%20alongside%20mom%20in%20the%20garage%20kitchen.%20%20Mom%20had%20furnished%20this%20canning%20area%20in%20our%20garage%20(which%20was%20really%20more%20like%20a%20barn)%20with%20appliances%20bought%20cheap%20at%20farm%20auctions.%20She%20had%20a%20double-cast%20iron%20farmers%20sink,%20a%20gas%20stove,%20and%20a%20dilapidated%20but%20still%20working%20refrigerator.%20%20Her%20rationale%20was%20that%20we%20did%20not%20have%20to%20heat%20up%20the%20house.%20%20%20In%20reality,%20it%20was%20a%20sweat%20shop%20out%20there%20and%20I%20would%20have%20much%20rather%20been%20inside%20with%20the%20air%20conditioner.%3C/p%3E%3Cp%3ENow%20as%20I%20survey%20my%20wreck%20of%20a%20kitchen%20after%20canning,%20I%20realize%20her%20wisdom.%20%20%20Clean%20up%20was%20simpler%20and%20I%20remember%20times%20when%20we%20actually%20washed%20out%20our%20work%20area%20with%20a%20garden%20hose.%3C/p%3E%3Cp%3EBack%20to%20this%20jam.%3C/p%3E%3Cp%3EEnjoy%20this%20concoction%20on%20the%20obligatory%20biscuit,%20English%20muffin,%20or%20homemade%20bread%20(see%20above)%20in%20the%20mornings,%20but%20also%20enjoy%20it%20on%20top%20of%20ice%20cream.%20%20%20%20One%20of%20my%20favorite%20ways%20to%20enjoy%20this%20jam%20is%20to%20eat%20it%20with%20a%20hot%20dog.%20What?%20Yes,%20you%20heard%20me%20right.%20%20%20Spread%20a%20toasted%20hot%20dog%20bun%20with%20cream%20cheese,%20spoon%20on%20some%20of%20this%20jam,%20place%20on%20a%20grilled-to-perfection%20hot%20dog,%20and%20top%20with%20jalapeno%20relish.%20%20This%20supreme%20idea%20is%20not%20mine.%20It%20is%20from%20The%20Dog%20House%20Food%20Truck%E2%80%99s%20Mercury%20Dog,%20only%20raspberry%20jam%20is%20used%20on%20the%20original.%3C/p%3E%3Cp%3EDon%E2%80%99t%20be%20scared%E2%80%A6try%20it.%20%20It%E2%80%99s%20a%20beautiful%20thing.%3C/p%3E%3Cp%3EBesides%20this%20beautiful%20hot%20dog%20creation,%20feel%20free%20to%20use%20Balsamic-Basil%20Strawberry%20Jam%20as%20a%20glaze%20for%20grilled%20chicken,%20lamb,%20or%20
