Baked Eggplant (Melanzane Al Forno) Recipe

  • 3 med eggplants - (abt 3 lbs) stem removed, sliced lengthwise into 1/2" slices
  • 1/4 c. extra-virgin extra virgin olive oil
  • 4 x garlic cloves thinly sliced Sea salt to taste Freshly-grnd black pepper to taste
  • 1/4 c. finely-minced Italian parsley

Directions

  1. Preheat the oven to 500 degrees.
  2. Place eggplant slices in a single layer on a lightly-oiled baking sheet. Brush each slice with the extra virgin olive oil. Stud each slice of eggplant with the sliced garlic, embedding the garlic as much as possible into the flesh of the eggplant.
  3. Season with salt and pepper and bake 20 to 25 min, till soft and golden. Remove from oven and allow to cold. When cold, sprinkle with parsley and serve.
  4. This recipe yields 8 servings.
