  • 1 sm white cabbage, finely sliced, rinsed, and liquid removed
  • 2 Tbsp. (30 ml) minced cilantro (coriander)
  • 1 Tbsp. (15 ml) minced fresh rue* (optional)
  • 1 pch asafoetida pwdr** (optional)
  • 3 Tbsp. (45 ml) honey
  • 2 Tbsp. (30 ml) red wine vinegar Salt and freshly grnd pepper to taste

Directions

  1. * Rue (Ruta graveolens) is a culinary and medicinal herb not widely available commercially. If you have some growing in your garden, please use it. Otherwise, please omit.
  2. ** Asafoetida is a pungent plant derivative available in Indian specialty shops.
  3. Combine the cabbage, coriander, rue, and asafoetida in a mixing bowl.
  4. Add in the remaining ingredients and toss to combine. Serve at room temperature.
  5. Serves 4 to 6.
