Ingredients

  • 1/2 lb asparagus
  • 1 Tbsp. water
  • 1 c. fresh squeezed orange juice
  • 3 Tbsp. low sodium soy sauce
  • 1 x clove garlic smashed flat and chopped
  • 1 tsp grated orange rind

Directions

  1. Break off the tough lower end of each stalk of asparagus. Wash and cut stalks into 1 inch pcs. Place asparagus and water in a microwave safe container. Cover and microwave on high for 4 to 5 min. Let stand 5 min. Drain excess water out of container. Pour juice and soy sauce over asparagus, add in garlic and stir. Marinate for at least one hour. Strain off marinade and use as salad dressing, if you like.
  2. Arrange asparagus on a serving dish and garnish with grated orange rind. Serve at room temperature or possibly chill.
  3. Serves two.
