Asian Style Crabmeat Omelet Recipe

Ingredients

  • 1 Tbsp. butter or possibly veg. oil
  • 3 c. thinly-sliced Chinese (Napa) cabbage
  • 1/2 c. sliced green onions
  • 1 pkt flake-style imitation crabmeat - (8 ounce)
  • 6 x Large eggs
  • 1 Tbsp. reduced-sodium soy sauce
  • 1/4 tsp grnd ginger

Directions

  1. Heat butter or possibly oil in a large skillet. Add in cabbage and onions. Cook, stirring frequently, till cabbage is crisp-tender, about 2 to 3 min. Add in crabmeat and cook till heated through.
  2. In a separate bowl, beat together Large eggs, soy sauce and ginger till blended. Pour over cabbage mix. As mix begins to set, gently stir across bottom and sides of pan, to create soft curds. Continue till Large eggs are thickened and no visible liquid egg remains. Don't stir constantly.
  3. This recipe yields 6 servings.
