Scrumptious soda bread rolls flavoured with a mix of fresh herbs.
Ingredients
- 300ml buttermilk
- 1 sprig fresh sage
- 1 sprig fresh rosemary
- 2 sprigs fresh thyme
- 1 sprig fresh basil
- 125g plain flour
- 125g wholemeal flour
- 50g oatbran
- 1 teaspoon salt
- 1 tablespoon bicarbonate of soda
Directions

PRE-HEAT THE OVEN TO 200˚C/180˚C FAN/GAS 6

Wash and finely chop all the herbs.

Mix the two flours, oatbran, salt and bicarbonate of soda in a bowl. Add the buttermilk and stir to form a dough.

Transfer the mixture to a floured surface and knead gently. Divide the dough into 8 balls. Shape each ball into a rectangular mini loaf and cut two slits on the top of each one.
5.
Place the mini loaves on a floured baking tray and bake for 25 minutes or until they sound hollow when tapped on the bottom.
