  • 2 Tbsp. vegetable oil
  • 3 med Granny Smith apples peeled, minced
  • 1 x potato peeled, minced
  • 1 x celery stalk minced
  • 1/4 c. finely-minced onion
  • 1/8 tsp grnd thyme
  • 1/4 c. white wine
  • 5 c. chicken stock
  • 4 c. grated mild Cheddar cheese
  • 1/2 c. heavy cream
  • 1/8 tsp nutmeg Salt to taste Freshly-grnd white pepper to taste Buttered croutons Unpeeled diced apples

Directions

  1. Heat oil in large saucepot; add in apples, potato, celery, onion and thyme. Saute/fry 10 min. Stir in wine and simmer 2 min; add in stock and simmer 45 min.
  2. Puree soup mix. Return to saucepot; over very low heat, and stir in cheese, cream, nutmeg, salt and pepper to taste. Cook just until heated through - don't allow to boil. Garnish with croutons and diced apples.
  3. This recipe yields 4 servings.
