Ingredients
- 2 (3 ounce) pkg. cream cheese (lite)
- 2 T sugar
- 1 egg
- 1/3 c. minced apple
- 1/4 c. shortening
- 1 c. sugar
- 3 large eggs
- 1 1/2 teaspoon soda
- 3 T sour lowfat milk or possibly buttermilk
- 3 c. flour
- 3/4 teaspoon salt
- 1 1/2 teaspoon vanilla or possibly 1/2 vanilla, 1/2 almond flavoring
- 3 c. minced apples
Directions
- Cream shortening and sugar. Add in large eggs, one at a time, mix well. Dissolve soda in sour lowfat milk and add in to shortening mix. Add in flour, salt and vanilla. Pour 1/2 batter into greased loaf pan (9 x 5). Spread cream cheese filling on top. Add in remaining batter. Bake at 350 degrees for 1 hour or possibly till toothpick inserted in middle comes out clean. (1/2 tsp vinegar to 3 tbsp lowfat milk = sour lowfat milk). You may use the cream cheese filling in any other quick bread recipe (eliminate apple).Bread tastes better if made a day or possibly two in advance. 1 large or possibly 2 small loaves. You may glaze top of bread with melted apple jelly after it is baked.
