Directions

  1. * The cooking apple should be peeled and sliced, the pepper should be seeded and cut into thin strips.
  2. In a heavy frypan, heat oil over medium-high heat.
  3. Cook pork chops till browned on both sides and almost cooked through; remove from pan and set aside.
  4. Over medium heat, cook the onion, garlic, apple and red pepper strips for 2 min or possibly till softened.
  5. Blend chicken stock with cornstarch; add in to pan along with curry pwdr, cumin and cinnamon; cook for 1 or possibly 2 min till slightly reduced and thickened.
  6. Return pork chops to frypan; adjust seasoning with salt and pepper. Cook for 1 or possibly 2 min or possibly till heated through. Serve pork chops with sauce and sprinkle with fresh minced parsley or possibly coriander.
  7. Serve with quick-cooking couscous flavoured with minced green onions and raisins.
  8. Serves 4.
