I am writing you back about the "moist cupcake" question you wrote me a while back. I know exactly what consistency and taste you are looking for. What creates that moisture is the fat content (unfortunately). Adding extra butter or oil is what works best. Careful with butter though because it has a tendency of creating a crunchy exterior, which is delicious but if you want the soft exterior and moist interior I would use a bit of oil. Play around with the measurements, but I wouldn't add more than 1/4 of a cup. Good luck!
