%20for%20Sunday%20dinner,%20a%20Yorkshire%20pudding%20was%20always%20on%20the%20menu%20as%20were%20roast%20potatoes%20and%20brussels%20sprouts.%20My%20mother%20was%20British%20so%20we%20grew%20up%20with%20many%20traditional%20foods.%20This%20was%20one%20of%20them.%20My%20mother%20used%20to%20make%20the%20Yorkshire%20pudding%20aka%20%E2%80%9Cyorkie,%E2%80%9D%20in%20an%20old%20deep-dish%20Pyrex%20pie%20pan.%20I%20can%20still%20see%20it%20clear%20as%20day%E2%80%93even%20though%20I%20might%20not%20remember%20what%20I%20had%20for%20lunch%20today,%20but%20the%20pie%20plate%20I%20remember%20LOL.%3C/p%3E%3Cp%3EAs%20I%20understand%20it,%20the%20origin%20of%20a%20Yorkshire%20pudding%20goes%20back%20to%20the%20days%20of%20old%20English%20country%20inns%20where%20they%E2%80%99d%20roast%20the%20beef%20on%20a%20hook%20in%20a%20hearth%20over%20an%20open%20flame%20and%20have%20a%20pan%20below%20the%20roast%20with%20a%20flour/milk%20mixture%20that%20caught%20the%20drippings%20and%20this%20was%20served%20with%20the%20roasted%20beef.%20How%20accurate%20this%20story%20is,%20I%20don%E2%80%99t%20know,%20but%20it%E2%80%99s%20one%20that%E2%80%99s%20often%20told.%3C/p%3E%3Cp%3EWhat%20a%20Yorkshire%20pudding%20really%20is%20amounts%20to%20a%20big%20popover%20that%20falls%20in%20the%20center.%20%20The%20center%20will%20fall%20almost%20immediately%20when%20it%20comes%20out%20of%20the%20oven.%20However,%20the%20high%20sides%20remain.%20Here%E2%80%99s%20what%20it%20looks%20like%20before%20taken%20out%20of%20the%20oven:%3C/p%3E%3Cp%3ETraditionally,%20beef%20drippings%20are%20used%20as%20the%20fat,%20but%20you%20can%20use%20oil%E2%80%93but%20NOT%20olive%20oil%20because%20of%20the%20high%20heat%20involved%20in%20making%20the%20pudding.%20The%20best%20choice%20if%20you%20use%20oil%20would%20be%20peanut,%20canola%20or%20safflower%20oil.%20Don%E2%80%99t%20use%20butter%20either.%20It%20will%20burn.%20If%20you%E2%80%99re%20really%20lucky%20and%20have%20rendered%20duck%20fat%20on%20hand,%20it%20can%20be%20made%20with%20that.%20Don%E2%80%99t%20skimp%20on%20the%20fat,%20but%20don%E2%80%99t%20overdo%20it%20either.%20You%20need%20a%20fat%20to%20make%20this,%20however%20too%20much%20will%20spoil%20it%20and%20the%20pudding%20won%E2%80%99t%20set%20up%20right.%3C/p%3E%3Cp%3EThe%20recipe%20is%20actually%20a%20formula%E2%80%93and%20a%20simple%20one.%20I%E2%80%99ve%20seen%20recipes%20on%20the%20net%20for%20this%20and%20it%E2%80%99s%20just%20unbelievable%20how%20a%20simple%20dish%20has%20been%20made%20complicated.%20I%E2%80%99ve%20seen%20ones%20with%20too%20much%20fat,%20too%20much%20flour,%20too%20many%20eggs,%20you%20name%20it.%20I%E2%80%99ve%20also%20seen%20ones%20that%20advise%20refrigerating%20the%20batter%E2%80%93NO,%20NO,%20and%20NO%20again.%20Don%E2%80%99t%20let%20this%20come%20near%20refrigeration!!%20Just%20let%20it%20sit%20for%2030-60%20minutes%E2%80%93and%20that%E2%80%99s%20the%20key%20to%20a%20GOOD%20Yorkie.%3C/p%3E%3Cp%3EThe%20formula%20is%20based%20on%20how%20many%20eggs%20you%20use.%20I%20really%20don%E2%80%99t%20know%20anyone%20who%20makes%20it%20with%20one%20egg%20though%E2%80%93it%20wouldn%E2%80%99t%20be%20big%20enough.%20Anywhere%20from%202-4%20eggs%20is%20the%20usual.%20Your%20pan%20is%20also%20important.%20You%20need%20one%20with%20high%20enough%20sides%20so%20the%20batter%20can%20%E2%80%9Chold%E2%80%9D%20the%20side%20and%20rise.%20I%20often%20make%20one%20that%20contains%202%20eggs%20and%20I%20use%20a%208-inch%20cast%20iron%20skillet%20which%20produces%20perfect%20results%20and%20makes%204%20normal%20servings.%20I%20do%20advise%20using%20cast%20iron%20skillets%20to%20make%20Yorkshire%20pudding.%20They%20conduct%20heat%20VERY%20well%20and%20you%20don%E2%80%99t%20have%20to%20worry%20about%20thermal%20shock%20the%20way%20you%20do%20with%20glass%20or%20ceramic.%20Metal%20pie%20pans%20and%20metal%20baking%20dishes%20will%20suffice%20too.%3C/p%3E%3Cp%3EIn%20the%20pudding%20above,%20I%20used%20some%20fresh%20chives.%20You%20can%20also%20use%20a%20pinch%20of%20thyme%20or%20any%20herb%20that%20suits%20your%20fancy.%20It%E2%80%99s%20not%20necessary%20because%20it%20tastes%20so%20good%20just%20plain!%20It%20also%20is%20great%20served%20alone%20for%20a%20light%20lunch,%20brunch%20or%20dinner!%3C/p%3E%3Cp%3EYorkshire%20Pudding%20%20%20%20%20%20%20%20Author:%20Judith%20Hannemann%20Serves:%20varies%20%20%20Ingredients%3C/p%3E%3Cp%3EFor%20EACH%20egg%20use:%20%E2%85%93%20cup%20flour,%20lightly%20spooned%20into%20the%20measuring%20cup%20%E2%85%93%20cup%20whole%20milk%201%20tbs%20beef%20drippings,%20rendered%20duck%20fat%20or%20oil%20%C2%BC%20tsp%20salt%20%C2%BD%20tsp%20fresh%20herbs%20-OR-%20%E2%85%9B%20tsp%20dried%20herbs%20(optional)%20%20%20Instructions%3C/p%3E%3Cp%3EBeat%20egg(s)%20with%20a%20wire%20whisk%20until%20light%20and%20fluffy%20Whisk%20in%20milk%20Whisk%20in%20flour%20and%20salt%20until%20no%20lumps%20remain.%20Let%20the%20batter%20sit%20for%20at%20least%2030%20minutes%20(don't%20refrigerate)%20Preheat%20oven%20to%20450%20degrees%20F%20Place%20appropriate%20amount%20of%20whatever%20fat%20you're%20using%20in%20an%20appropriate-sized%20skillet%20or%20pan%20(see%20NOTES)%20Place%20pan%20with%20fat%20in%20preheated%20oven.%20Let%20the%20pan/fat%20heat%20for%20about%205-7%20minutes%20or%20until%20the%20fat%20is%20very%20hot%20and%20almost%20at%20the%20smoke%20point%20(you'll%20have%20to%20keep%20an%20eye%20on%20this,%20but%20I%20find%20it's%20ready%20in%205%20minutes%20with%20drippings%20or%20duck%20fat)%20Pour%20the%20batter%20into%20the%20hot%20pan%20and%20bake%20for%2010-15%20minutes%20or%20until%20the%20sides%20have%20puffed%20and%20are%20a%20nice%20golden%20brown.%20The%20center%20will%20fall%20almost%20immediately%20after%20being%20removed%20from%20the%20oven--this%20is%20normal!%20Serve%20immediately.%20%20%20Notes%20I%20HIGHLY%20recommend%20using%20cast%20iron%20skillets%3C/p%3E%3Cp%3EFor%20a%202-egg%20batter,%20use%20a%208%20or%209-inch%20skillet.%20It's%20better%20to%20use%20the%20smaller.%3C/p%3E%3Cp%3EYum%3C/p%3E){kind=link}
