White Navy Bean Soup

Ingredients

  • 1 pound dry white navy beans
  • 2 (1 inch) slices smoked ham
  • 1 lg. onion, minced
  • 2 cloves garlic, chopped
  • 2 stalks celery, cut into one inch pcs
  • Salt, black pepper, cayenne pepper to taste
  • 1/2 c. minced green onion tops (garnish)

Directions

  1. Wash beans, cover with water two inches over top, soak overnight. Add in ham, onion, garlic, celery. bring to a boil, lower heat and simmer till beans are tender (additional water can be added if mix is too thick).
  2. Puree mix in processor, return to pot and season with salt, black pepper and cayenne pepper. Serve in soup bowls, garnish with green onions tops.
