Ingredients

  • 1 cup dried Great Northern beans, sorted and rinsed
  • water to cover beans, about 4 cups
  • 6 cups water
  • 4 cups lower-sodium chicken broth
  • 2 1/2 cups fresh baby spinach leaves*
  • 3 mini orange sweet peppers, sliced
  • 2 medium-size carrots, sliced
  • 1 medium-size yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, diced
  • 3 bay leaves
  • 2 t dried oregano leaves
  • 1 t dried sage leaves
  • 1/2 t each salt and pepper
