- 10 medium eggs, room temperature, separated
- 1/4 teaspoon salt
- 100g (1/2 cup) granulated (white) sugar
- 170g (3/4 cup or 1 1/2 sticks) unsalted butter, room temperature
- 100g (4/5 cup) powdered (confectioners) sugar
- 125g (1 cup) all-purpose flour
- 65g (1/2 cup) cornstarch
- 2 tsp vanilla paste or extract
- 2 tbsp cocoa powder

- 200g (7oz) good quality milk chocolate, chopped
- 180ml (3/4 cup) whole cream
- 2 tsp light corn syrup
