Wonderfully, refreshing summer sauce and dip! Great on almost everything!

Ingredients

  • 6-8 ounces plain Greek yogurt
  • 6 inch piece of cucumber, peeled and thickly grated
  • 1 or 2 garlic clove, crushed
  • 1 tablespoon olive oil (optional)
  • 1 tablespoon finely chopped fresh mint
  • Zest and juice from 1/2 lemon
  • salt

Directions

  1. Strain yogurt. I use a coffee filter in a fine mesh strainer.
  2. After you grate cucumbers, strain the cucumbers by either placing them in a coffee filter in a fine mesh strainer or putting them in a towel and wriging it out.
  3. Put the strained yogurt in a bowl and add the cucumber and mix.
  4. Add the garlic, olive oil (if using), mint, lemon juice, zest, and salt. Mix well.
  5. Cover with plastic wrap and chill lightly.
