Ingredients

  • 15 oz (425g) boneless, skinless, chicken breast, thinly sliced
  • 1 parboiled or 1 can (12 oz/340g) bamboo shoot
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2-inch knob ginger, peeled and minced
  • 2 tbsp fermented black beans, rinsed, drained, and minced
  • 1 red chili, seeds removed and minced
  • 4 Chinese mushrooms, rehydrated, stems removed, and thinly sliced
  • ½ salt (or to taste)
  • 1 tsp sesame oil
  • Marinade
  • 1 tbsp soy sauce
  • 1 tbsp Shao Hsing rice wine
  • 1 tsp corn starch
