I am a life long member of the "I love coconut" fan club. I must really love coconut cake, because I've already shared three different coconut cake recipes on my blog (starting in 2009). My favorite cake is white cake. Hands down. End of story. I prefer an all egg-white cake, or it's not a genuine white cake. Am I right?
But, did I really need another coconut cake recipe? Maybe. Maybe not. But, when you have five egg whites leftover from a lemon custard recipe, white cake seems like a good way to use them. Coconut seems to be synonymous with Easter treats, and I hadn't baked a cake in a while.

.%20My%20favorite%20cake%20is%20white%20cake.%20Hands%20down.%20End%20of%20story.%20%20I%20prefer%20an%20all%20egg-white%20cake,%20or%20it's%20not%20a%20genuine%20white%20cake.%20Am%20I%20right?%3C/p%3E%3Cp%3EBut,%20did%20I%20really%20need%20another%20coconut%20cake%20recipe?%20%20Maybe.%20Maybe%20not.%20%20But,%20when%20you%20have%20five%20egg%20whites%20leftover%20from%20a%20lemon%20custard%20recipe,%20white%20cake%20seems%20like%20a%20good%20way%20to%20use%20them.%20%20Coconut%20seems%20to%20be%20synonymous%20with%20Easter%20treats,%20and%20I%20hadn't%20baked%20a%20cake%20in%20a%20while.%3C/p%3E%3Cp%3EWe%20were%20having%20dinner%20guests,%20so%20this%20seemed%20like%20the%20perfect%20time%20to%20bake%20a%20cake.%20%20I'm%20loving%20this%20brand%20of%20USA%20cake%20pans,%20and%20I%20just%20got%20these%20square%20ones.%20%20%20I%20wanted%20a%20cake%20recipe%20that%20wouldn't%20be%20too%20fussy%20to%20make--%20but%20I%20wanted%20a%20lot%20of%20coconut%20flavor.%20%20I'm%20a%20fan%20of%20LorAnn%20oils%20and%20flavors%20and%20their%20coconut%20flavor%20is%20something%20I%20keep%20on%20hand.%20%20King%20Arthur%20unbleached%20cake%20flour%20is%20also%20a%20%22must%22%20in%20my%20pantry,%20because%20I%20always%20get%20tender%20cakes%20when%20I%20use%20it.%3C/p%3E%3Cp%3EThe%20batter%20isn't%20complicated,%20either.%20%20The%20dry%20ingredients%20are%20measured%20into%20a%20mixing%20bowl,%20then%20butter%20and%20coconut%20milk%20is%20mixed%20in.%20%20The%20wet%20ingredients%20are%20whole%20milk,%20eggs%20whites%20and%20coconut%20flavor%20and%20a%20little%20pure%20vanilla%20extract.%3C/p%3E%3Cp%3EI%20prepped%20the%20pans%20with%20non-stick%20spray%20and%20lined%20the%20bottom%20with%20parchment%20paper.%20%20The%20recipe%20said%20to%20bake%20the%20cakes%20for%2035-40%20minutes.%20%20Erring%20on%20the%20side%20of%20caution,%20I%20always%20set%20two%20timers--%20one%20to%20check%205%20minutes%20earlier.%20%20Ding!%20The%20cakes%20were%20baked%20at%2030%20minutes.%3C/p%3E%3Cp%3EThe%20reason%20I%20love%20these%20cake%20pans%20so%20much,%20is%20that%20the%20cakes%20baked%20evenly%20and%20released%20without%20any%20problems.%20Whew!%3C/p%3E%3Cp%3EThere%20are%20two%20versions%20of%20frosting,%20for%20this%20cake.%20%20First,%20a%20buttercream%20frosting%20is%20made%20with%20a%20combination%20of%20cream%20cheese%20and%20butter.%20Win!%20%20Let's%20up%20the%20ante%20a%20bit.%20%20How%20about%20making%20a%20filling%20with%20real%20whipped%20cream,%20and%20some%20of%20the%20buttercream%20whipped%20into%20it?%3C/p%3E%3Cp%3EUh-huh.%20Brilliant.%20%20It's%20silky%20and%20billowy%20and%20just%20the%20right%20balance%20of%20sweet.%3C/p%3E%3Cp%3EThe%20final%20step%20is%20to%20frost%20the%20remaining%20cake%20with%20the%20cream%20cheese/buttercream%20frosting...and%20you%20need%20coconut,%20of%20course.%3C/p%3E%3Cp%3EYou%20definitely%20want%20to%20refrigerate%20this%20cake%20for%20at%20least%20two%20hours,%20before%20serving.%3C/p%3E%3Cp%3EHere's%20why:%20%20The%20cake%20slice%20on%20the%20left%20isn't%20chilled%20as%20much.%20You%20can%20see%20that%20the%20filling%20is%20softer%20and%20the%20cake%20crumb%20is%20very%20loose.%20%20The%20slice%20on%20the%20right%20is%20chilled,%20and%20slightly%20brought%20to%20room%20temperature.%20The%20%22crumb%22%20is%20a%20bit%20tighter%20and%20the%20filling%20is%20set.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20The%20cake%20was%20super%20moist,%20thank%20goodness.%20%20I%20loved%20the%20beautiful%20white%20color,%20and%20the%20sweetness%20wasn't%20overpowering.%20In%20fact,%20this%20cake%20had%20the%20perfect%20balance%20of%20coconut%20flavor%20without%20being%20over-the-top%20sweet.%20%20The%20filling%20was%20my%20favorite%20part%20because%20the%20whipped%20cream%20toned%20down%20the%20sugary%20sweetness%20of%20buttercream%20frosting.%20%20How%20can%20anyone%20not%20love%20a%20cream%20cheese/buttercream%20frosting?%20There's%20that%20subtle%20tartness%20of%20the%20cream%20cheese%20and%20the%20crunch%20of%20sweetened%20coconut.%20NOTE:%20This%20time%20I%20chose%20not%20to%20toast%20the%20coconut,%20only%20because%20I%20wanted%20a%20pure%20white%20cake.%20%20If%20you%20want%20toasted%20coconut%20cake,%20go%20for%20it!%3C/p%3E%3Cp%3EIn%20case%20you%20are%20wondering%20if%20you%20can%20make%20these%20into%20cupcakes--%20I%20would%20say%20%22yes%22,%20but%20you'd%20have%20to%20choose%20which%20frosting%20you'd%20want%20to%20use.%20Or,%20you%20could%20pipe%20in%20a%20filling%20and%20then%20frost%20them--%20but%20that%20sounds%20like%20a%20lot%20of%20work.%3C/p%3E%3Cp%3EHere%20are%20my%20other%20three%20coconut%20cake%20recipes:%3C/p%3E%3Cp%3EHere's%20the%20recipe:%3C/p%3E){kind=link}
