%3C/p%3E%3Cp%3EI%20have%20never%20cooked%20a%20turkey%20so%20when%20I%20saw%20the%20recipe%20for%20roast%20turkey%20with%20a%20mushroom-risotto%20rice%20stuffing%20in%20my%20copy%20of%20The%20Supper%20Club%20I%20knew%20I%20was%20going%20to%20volunteer%20this%20for%20our%20Christmas%20lunch.%20In%20years%20gone%20by,%20once%20we%20stopped%20going%20to%20Johannesburg%20for%20a%20family%20lunch,%20and%20the%20children%20stopped%20coming%20to%20us%20for%20a%20Christmas%20meal%20I%20did%20not%20bother%20to%20go%20overboard%20for%20just%20Dave%20and%20I.%20I%20used%20to%20go%20down%20to%20Woolworths%20on%20Christmas%20morning%20and%20pick%20up%20Italian%20deli%20meats%20and%20a%20variety%20of%20cheeses%20and%20we%20would%20have%20that%20to%20snack%20on%20when%20we%20got%20hungry.%20I%20always%20made%20us%20a%20treat%20of%20a%20breakfast,%20poached%20eggs%20with%20hollandaise%20sauce%20being%20my%20favourite%20choice.%20In%202014%20we%20were%20invited%20to%20friend%E2%80%99s%20for%20Christmas%20Day%20and%20it%20was%20such%20a%20wonderful%20experience%20to%20be%20a%20part%20of%20a%20family%20gathering.%20Everyone%20contributed%20a%20part%20of%20the%20meal.%20So%20when%20we%20were%20invited%20back%20in%202015%20I%20offered%20to%20bring%20the%20turkey%20as%20our%20offering%20to%20the%20table.%20I%20went%20to%20my%20local%20Woolworths%20to%20see%20if%20they%20would%20let%20me%20buy%20the%20turkey%20in%20advance%20to%20make%20sure%20I%20got%20one,%20and%20if%20they%20would%20keep%20it%20for%20me%20in%20their%20freezer%20as%20mine%20did%20not%20have%20enough%20space%20in%20it.%20They%20were%20more%20than%20accommodating%20and%20on%20the%2022nd%20of%20December%20I%20went%20to%20collect%20the%20bird.%20I%20left%20it%20to%20defrost%20in%20my%20fridge%20until%20the%2024th%20when%20I%20decided%20to%20get%20it%20cooked.%20I%20followed%20the%20recipe%20to%20the%20tee%20and%20discovered%20that%20I%20had%20far%20too%20much%20risotto%20left%20over.%20Not%20wanting%20anything%20to%20go%20to%20waste%20I%20put%20the%20rest%20into%20a%20bowl%20and%20we%20had%20it%20as%20a%20side%20dish.%20The%20turkey%20was%20perfect%20served%20cold%20and%20I%20might%20attempt%20this%20method%20when%20next%20doing%20a%20roast%20chicken%20as%20a%20meal%20for%20guests.%20I%20snapped%20a%20photograph%20of%20the%20turkey%20with%20my%20phone%20to%20show%20to%20the%20ladies%20at%20Woolworths%20who%20had%20made%20it%20possible%20for%20me%20to%20make%20this%20roast%20turkey%20to%20take%20with%20us.%20Lunch%20was%20fantastic.%20We%20were%20a%20%E2%80%98family%E2%80%99%20of%209%20and%20the%20afternoon%20crept%20into%20the%20evening%20without%20us%20even%20noticing%20that%20the%20time%20had%20gone%20by.%3C/p%3E%3Cp%3E25g%20dried%20porcini%20mushrooms%20375mls%20mushroom%20stock%20150g%20risotto%20rice%2025g%20butter%2015mls%20olive%20oil%201%20onion,%20peeled%20and%20finely%20chopped%201%20celery%20stalk,%20finely%20sliced%20Salt%20and%20freshly%20ground%20black%20pepper%20to%20season%20250g%20mixed%20mushrooms,%20quartered%202%20garlic%20cloves,%20crushed%205g%20flat%20leaf%20parsley,%20roughly%20chopped%205%20sprigs%20thyme,%20leaves%20picked%201%20x%204-5kg%20turkey%20at%20room%20temperature,%20giblets%20removed%20and%20set%20aside%2015g%20butter,%20melted%20Salt%20and%20freshly%20ground%20black%20pepper%20to%20season%201%20onion,%20peeled%20and%20chopped%202%20sticks%20celery,%20sliced%204%20garlic%20cloves,%20peeled%20and%20finely%20chopped%2015%20sprigs%20thyme%2010g%20parsley,%20roughly%20chopped%20500mls%20chicken%20stock%20250mls%20dry%20white%20wine%20Rocket%20leaves,%20for%20garnishing%3C/p%3E%3Cp%3EPlace%20the%20dried%20mushrooms%20into%20a%20bowl%20Pour%20the%20stock%20over%20the%20mushrooms%20Leave%20to%20stand%20for%2020%20minutes%20Strain,%20reserving%20the%20liquid%20Place%20the%20rice%20and%20served%20liquid%20into%20a%20saucepan%20Bring%20to%20the%20boil,%20reduce%20the%20heat%20slightly%20and%20cook%20at%20a%20rolling%20boil%20for%2010%20minutes%20Place%20the%20butter%20and%20oil%20into%20a%20roasting%20pan%20Over%20a%20medium%20temperature,%20heat%20until%20the%20butter%20has%20melted%20Add%20the%20onions%20and%20celery%20and%20saut%C3%A9%20until%20soft%20Season%20lightly%20and%20add%20the%20dried%20and%20fresh%20mushrooms%20Stir%20to%20mix%20and%20saut%C3%A9%20until%20just%20cooked%20Season%20to%20taste%20and%20then%20add%20the%20garlic,%20parsley,%20thyme%20and%20rice%20Adjust%20the%20seasoning%20and%20set%20aside%20to%20cool%20Open%20the%20packet%20with%20the%20giblets%20and%20remove%20the%20liver%20(see%20notes)%20Chop%20up%20the%20remaining%20giblets%20Preheat%20the%20oven%20to%20200%C2%B0%20Celsius%20Spoon%20the%20stuffing%20into%20the%20cavity%20and%20fold%20the%20skin%20of%20the%20neck%20over%20the%20back%20Bend%20the%20wing%20tips%20under%20the%20body%20Tie%20the%20ends%20of%20the%20legs%20together%20Place%20the%20turkey,%20breast%20side%20up,%20into%20the%20roasting%20pan%20Brush%20with%20the%20melted%20butter%20and%20season%20gen
