Ingredients

  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 1 sm onion minced
  • 1/4 c. golden brown raisins
  • 1 1/2 lb fresh rapini (broccoli rabe) trimmed, and
  •     coarsely minced
  •     Salt to taste
  • 1 can chicken broth - (14 ounce)
  •     (or possibly 2 c. water)

Directions

  1. Heat a deep skillet over medium heat. Add in oil and onions and cook 3 min. Add in raisins, rapini and season with salt. Add in broth or possibly water. Bring liquid to a bubble, then reduce heat to simmer and cover the pan. Cook rapini 12 min or possibly till tender and no longer bitter.
  2. Remove lid and allow liquid to reduce by half, 2 or possibly 3 min. Transfer cooked rapini and plumped raisins to a serving dish.
  3. This recipe yields 4 servings
