Ingredients
- Roasted Chicken with Italian Sausage
- (Adapted from a Nigella Lawson recipe in Food & WineâMarch 2007.)
- 2 T. crushed brown mustard seeds
- 1 T. Champagne vinegar
- 1/2 c. extra virgin olive oil
- 3/4 c. white wine
- 1 T. dried chervil
- 1/4 c. fresh flat leaf parsley
- 1 T. Worcestershire
- 1 lemon
- 1 large onion, peeled (I used five âover-winteredâ onions from the garden.)
- 1 sprig of rosemary
- 1 bay leaf (fresh is best)
- Ground pepper to taste
- 5 lbs. of chicken pieces (breasts, thighs, or assorted pieces)
- 1 (16 oz.) pkg Italian Sausage (I used some locally made authentic Italian sausage.)

.%20Hopefully,%20this%20isn't%20a%20practice%20isn't%20continued%20today.%3C/p%3E%3Cp%3EWhen%20I%20was%20in%20the%20fourth%20grade,%20we%20played%20bingo%20for%20prizes%20the%20day%20before%20Easter%20vacation.%20%20As%20I%20recall,%20the%20prizes%20were%20the%20usual%20Easter%20fare%E2%80%94chocolate%20bunnies,%20jelly%20beans,%20and%20of%20course,%20Peeps.%20%20But,%20the%20ultimate%20prize%20was%20what%20I%20was%20after%E2%80%94two%20purple-dyed%20chicks.%3C/p%3E%3Cp%3EIt%20seemed%20like%20we%20played%20for%20hours%20with%20the%20teacher%20calling%20out%20numbers.%20%20%20So%20far,%20I%20had%20no%20luck,%20but%20the%20big%20prize%20was%20not%20on%20the%20table%20yet.%20%20%20%20I%20was%20saving%20my%20win%20for%20those%20chicks.%3C/p%3E%3Cp%3EFinally,%20it%20was%20time%20for%20the%20big%20game%E2%80%94the%20final%20game%20before%20Easter%20vacation%20and%20the%20game%20for%20those%20neon-dyed%20beauties.%20%20The%20teacher%20called%20the%20first%20number.%20%20%20I%20had%20it!%20%20I%20placed%20my%20dried%20pinto%20bean%20on%20the%20square.%20%20%20I%20was%20off%20to%20a%20flying%20start%20to%20win%20those%20chicks.%3C/p%3E%3Cp%3EThe%20bingo%20game%20seemed%20to%20drag%20on%20and%20on.%20%20%20Was%20anyone%20going%20to%20win?%3C/p%3E%3Cp%3EFinally,%20the%20teacher%20called%20out%20B5.%20%20I%20had%20it%20too.%20%20%20My%20face%20began%20to%20turn%20red%20as%20I%20realized%20I%20had%20won.%3C/p%3E%3Cp%3EI%20was%20just%20able%20to%20croak%20out%20a%20stuttery%20%E2%80%9CI%20got%20it!%E2%80%9D%22%20%20%20As%20the%20teacher%20checked%20my%20card,%20I%20could%20not%20keep%20my%20excitement%20to%20myself.%20%20I%20now%20owned%20a%20pair%20of%20perfect%20purple%20Easter%20chicks.%3C/p%3E%3Cp%3EFor%20some%20reason,%20mom%20picked%20us%20up%20at%20school%20that%20day%20(which%20was%20probably%20a%20good%20thing%E2%80%94she%20saved%20the%20poor%20chicks%20a%20ride%20home%20on%20the%20bus).%20%20She%20didn%E2%80%99t%20seem%20to%20be%20as%20excited%20as%20I%20was%20about%20her%20daughter%20being%20the%20proud%20new%20owner%20of%20Easter%20chicks.%20%20But,%20she%20found%20a%20shoebox%20and%20we%20hauled%20them%20home.%3C/p%3E%3Cp%3EWe%20lived%20on%20a%20farm%20but%20it%20was%20a%20farm%20without%20chickens.%20%20We%20found%20a%20place%20for%20them%20in%20the%20barn%20and%20as%20soon%20as%20dad%20got%20home%20we%20built%20a%20make-shift%20pen.%3C/p%3E%3Cp%3EMy%20parents%20soon%20realized%20that%20the%20newness%20and%20excitement%20of%20winning%20the%20chicks%20was%20wearing%20off.%20%20After%20three%20months,%20if%20you%20looked%20close,%20you%20could%20still%20see%20a%20bit%20of%20purple%20fluff%20on%20these%20almost%20fully%20grown%20chickens.%20%20We%20also%20realized%20that%20we%20had%20a%20rooster%20and%20a%20hen.%3C/p%3E%3Cp%3EOne%20day%20my%20Grandma%20asked%20if%20she%20could%20buy%20my%20chickens.%20%20%20Was%20it%20a%20miracle?%20%20Not%20only%20would%20I%20be%20minus%20one%20chore,%20but%20she%20was%20going%20to%20pay%20me%20$10!%20%20I%20figured%20that%20if%20I%20really%20missed%20them,%20I%20could%20visit%20them%20at%20Grandma%E2%80%99s.%20%20SOLD!%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20remember%20much%20about%20my%20chicken%20days.%20%20I%20don%E2%80%99t%20remember%20their%20names%20or%20if%20I%20even%20named%20them.%20%20%20I%20remember%20the%20win%20and%20I%20remember%20selling%20them%20to%20Grandma.%20%20It%20was%20a%20good%20thing%20I%20was%20not%20so%20attached%20to%20those%20purple%20Easter%20chicks.%3C/p%3E%3Cp%3EOne%20Sunday%20as%20we%20sat%20around%20Grandma%E2%80%99s%20dining%20room%20table%20(you%20can%20see%20where%20this%20is%20going),%20my%20younger%20sister%20asked,%20%E2%80%9CWhich%20purple%20chicken%20are%20we%20eating?%E2%80%9D%20%20There%20was%20an%20awkward%20pause%20and%20everyone%20looked%20at%20me.%3C/p%3E%3Cp%3EWe%20had%20always%20lived%20on%20a%20farm%20from%20the%20time%20I%20could%20remember.%20%20We%20always%20ate%20what%20we%20grew.%20%20We%20knew%20that%20when%20we%20bottle-fed%20a%20calf%20that%20one%20day%20it%20would%20be%20sold%20or%20fattened%20up%20for%20butchering.%20%20Even%20the%20lambs%20and%20pigs%20we%20raised%20by%20hand%20for%20showing%20in%204-H%20would%20be%20sold%20or%20eaten.%20%20(And%20they%20even%20had%20names!)%20%20This%20was%20just%20life%20on%20the%20farm.%3C/p%3E%3Cp%3EWas%20I%20mortified%20that%20Grandma%20had%20butchered%20and%20cooked%20one%20of%20my%20purple%20Easter%20chicks?%20%20Not%20really.%3C/p%3E%3Cp%3E%E2%80%9CPass%20the%20chicken%20and%20noodles,%20please.%E2%80%9D%3C/p%3E%3Cp%3EI%20am%20not%20a%20huge%20fan%20of%20chicken%20and%20noodles%20(and%20it%20doesn%E2%80%99t%20have%20anything%20to%20do%20with%20the%20Easter%20chick%20incident%20from%20my%20past),%20so%20here%20is%20another%20recipe%20that%20could%20work%20well%20on%20the%20Easter%20table.%3C/p%3E%3Cp%3EIn%20a%20blender,%20pulse%20together%20mustard%20seeds,%20vinegar,%20oil,%20wine,%20chervil,%20parsley%20and%20Worcestershire.%20%20Place%20liquid%20in%20a%20large%20sealable%20plastic%20bag.%20%20Quarter%20lemon%20and%20onion%20and%20place%20in%20bag.%20%20Add%20bay%20leaf%20(crushed),%20rosemary,%20and%20ground%20pepper.%20%20Add%20chicken%20pieces.%20%20Mix%20all%20ingredients%20together%20in%20bag%20to%20coat%20chicken%20well.%3C/p%3E%3Cp%3ENot%20a%20very%20photogenic%20meal%20at%20this%20point.%3C/p%3E%3Cp%3ELet%20marinate%20overnight%20in%20the%20refrigerator.%3C/p%3E%3Cp%3ETo%20roast,%20preheat%20oven%20to%20425%20degrees.%20%20(I%20used%20the%20convection%20roast%20setting.)%20%20%20Remove%20chicken%20from%20refrigerator%20and%20let%20stand%20for%2015%20minutes.%20%20Pour%20chicken%20and%20marinade%20into%20a%20large%20roasting%20pan.%20%20Remove%20bay%20leaf%20and%20rosemary.%20%20Place%20chicken%20in%20pan%20so%20skin%20side%20is%20up.%20%20%20Arrange%20sausage(s)%20around%20chicken.%3C/p%3E%3Cp%3EThis%20was%20a%20long%20sausage%20link!%20I%20placed%20the%20onions%20and%20lemons%20on%20the%20bottom%20of%20the%20pan%20and%20layered%20the%20chicken%20on%20top.%3C/p%3E%3Cp%3ERoast%20for%201%20hour.%3C/p%3E%3Cp%3EAfter%20thirty%20minutes,%20turn%20the%20sausage(s).%20%20(If%20you%20would%20like%20the%20chicken%20browned%20more,%20place%20under%20the%20broiler%20for%201%20minute.)%3C/p%3E%3Cp%3EThe%20skin%20got%20crispy%20and%20delicious.%3C/p%3E%3Cp%3EYou%20may%20sprinkle%20with%20fresh%20parsley%20before%20serving.%3C/p%3E%3Cp%3EServe%20chicken%20and%20sauce%20over%20rice.%20%20(I%20actually%20just%20stirred%20my%20parsley%20in%20the%20rice%20before%20serving.)%3C/p%3E%3Cp%3ENow,%20if%20I%20could%20just%20be%20so%20lucky%20with%20that%20Mega%20Million%20Lottery!%3C/p%3E){kind=link}
