Ingredients

  • 1/2 x Fillet of beef, trimmed (about 2-1/2 to 3 lbs.)
  • 2 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Cracked black pepper
  • 1 c. Cilantro leaves
  • 1/2 c. Parsley leaves
  • 2 x Limes, juice & zest only
  • 1 x Garlic clove, crushed
  • 1 Tbsp. Dijon mustard
  • 1 1/4 c. Cornichons
  • 1 tsp Grnd coriander

Directions

  1. Preheat oven to 450 F. Rub fillet with extra virgin olive oil and pepper. Roast 20 to 25 min for rare. Cold; chill. Serve cool with cilantro sauce.
  2. CILANTRO SAUCE: Combine all ingredients in a blender and process till leaves are roughly minced and ingredients are blended. Chill till ready to serve.
