Espresso Blackened Beef Tenderloin Recipe

  • 4 x tenderloin beef portions - (8 ounce ea) Salt to taste Freshly-grnd black pepper to taste
  • 2 c. decaffeinated espresso coffee beans finely grnd

Directions

  1. Season beef with salt and pepper. Dip the top and bottom of the beef into the espresso. Place the beef espresso-end down in super-warm cast-iron pan. Sear all sides of the beef leaving the one espresso-crusted side unseared till your finished with the rest, then place the unseared side down in the pan and place into a 500 degree oven. Cook till desired temperature, 2 min being rare and 8 being well done (times will vary). Always let your meat rest for a few min after cooking. It lets the juice set into the meat.
