Egg Cheese Mushroom Bake

Ingredients

  • 2 c. minced onion
  • 2 tbsp. butter
  • 16 hard boiled Large eggs, sliced
  • 8 ounce. can mushrooms, sliced and liquid removed
  • 16 ounce. shredded Swiss cheese
  • 2 cans cream of mushroom soup
  • 1 1/2 c. lowfat milk
  • 2 teaspoon prepared mustard
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dill weed

Directions

  1. Saute/fry onion in butter till tender. Spread in 13 x 9 inch glass baking dish. Top with egg slices, and sprinkle with cheese. Beat remaining ingredients with rotary beater, and pour over cheese. Sprinkle with paprika and bake about 45 min at 350 degrees. Serve over toasted English muffins.
  2. NOTE: This may be prepared one day before. Chill, covered, and let come to room temperature before baking. Serves 8.
