%20(even%20though%20everyone%20knows%20the%20Vikings%20actually%20discovered%20America),%20Samhain%20(October%2031st)%20and%20Halloween%20(October%2031st).%20%20Why%20our%20local%20Family%20Dollar%20had%20Halloween%20candy%20displayed%20since%20the%20end%20of%20July,%20I%20do%20not%20know.%20%20Think%20about%20it,%20that%20is%203%20months%20the%20candy%20is%20sitting%20on%20the%20shelves,%20waiting%20to%20be%20purchased%20and%20given%20out%20to%20children%20trick%20or%20treating.%20%20Glancing%20down%20one%20aisle,%20Thanksgiving%20decorations%20(sorry,%20the%20harvest%20themed%20decor%20is%20geared%20towards%20turkey%20day);%20which%20means%20Yule%20and%20Christmas%20decor%20should%20be%20available%20in%20about%201-2%20weeks.%20%20Ridiculous!%20%20This%20is%20why%20many%20people%20get%20stressed%20out%20from%20October%20to%20January;%20the%20seasonal%20holidays%20are%20being%20rammed%20down%20our%20throats%20daily,%20and%20all%20at%20once!%20%20Tell%20me,%20who%20actually%20has%20the%20time%20to%20welcome%20in%20the%20New%20Year%20after%20all%20that%20chaos!%20%20Thank%20you%20for%20letting%20me%20rant,%20now%20back%20to%20baking%20and%20today's%20post%20on%20cookies,%3C/p%3E%3Cp%3EI%20let%20my%20hubby,%20Roy,%20pick%20out%20the%20flavor%20of%20the%20cake%20mix%20for%20my%20first%20attempt,%20and%20he%20choose%20Red%20Velvet.%20%20In%20case%20you%20didn't%20know,%20red%20velvet%20is%20basically%20chocolate%20cake%20with%20a%20dump%20load%20of%20red%20food%20coloring.%20%20I%20have%20made%20it%20from%20scratch,%20but%20remember,%20I%20was%20looking%20for%20easy.%20%20Oh,%20I%20did%20find%20a%20recipe%20for%20these%20cookies%20which%20claimed%20they%20were%20%22made%20from%20scratch%22.%20%20Going%20over%20the%20recipe,%20I%20would%20rename%20it,%20%22Semi-homemade%22,%20as%20boxed%20cake%20mix%20is%20still%20a%20main%20ingredient%20plus%20the%20addition%20of%20instant%20pudding.%20%20%20It%20was%20a%20complicated,%20many%20ingredient%20recipe%20which%20resulted%20in%20only%2020%20cookies%20at%20completion;%20simply%20not%20worth%20my%20time%20when%20I%20was%20looking%20for%20fast%20and%20easy.%3C/p%3E%3Cp%3EHere%20is%20the%20basic%20recipe%20for%20Cake%20Batter%20Cookies%20(using%20a%20boxed%20cake%20mix)%20which%20I%20found%20listed%20on%20the%20internet%20many,%20many%20times.%3C/p%3E%3Cp%3ECake%20Batter%20Cookies%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E**%201/3%20cup%20is%20for%2015.25%20oz.%20+%20one%20ounce%20of%20flour,%20or%2016.25%20oz.%20total.%3C/p%3E%3Cp%3E1/2%20cup%20is%20for%2018.25%20oz.%3C/p%3E%3Cp%3EIf%20you%20live%20in%20a%20high%20altitude%20area,%20like%20myself,%20add%20the%20appropriate%20amount%20of%20flour%20listed%20on%20the%20cake%20mix%20box.%20%20I%20shifted%20the%20mix%20+%20flour,%20added%20the%20oil%20for%20the%20size%20mix%20used,%20and%20the%202%20eggs;%20it%20all%20came%20together%20perfectly.%3C/p%3E%3Cp%3EAdditions:%20%201/2%20cup%20for%20chips%20-%20mint,%20vanilla,%20semi-sweet,%20milk%20chocolate,%20dark%20chocolate,%20butterscotch,%20peanut%20butter,%20cinnamon%20or%20toffee.%3C/p%3E%3Cp%3E1/2%20cup%20for%20nuts%20and%20dried%20fruits;%20large%20nuts%20and%20fruits%20should%20be%20chopped.%3C/p%3E%3Cp%3E1/4%20cup%20for%20sprinkles%20-%20they%20are%20tiny,%20so%20a%20little%20will%20go%20a%20long%20way.%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350F;%20line%20jelly%20roll%20pans%20or%20cookie%20sheets%20with%20parchment%20paper%20(keeps%20the%20cookies%20from%20sticking%20and%20burning).%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20mix%20together%20cake%20mix,%20oil,%20eggs%20and%20any%20additions.%20%20I%20used%20a%20heavy%20duty%20rubber%20spatula%20and%20it%20blended%20together%20without%20any%20issues.%20%20A%20ball%20of%20dough%20will%20form%20(it%20can%20be%20wrapped%20in%20plastic%20wrap,%20refrigerated%20for%20use%20after%20an%20hour,%20in%20case%20several%20different%20flavors%20are%20going%20to%20be%20baked%20up).%3C/p%3E%3Cp%3EUse%20a%20teaspoon%20to%20measure%20out%20the%20dough,%20roll%20into%20a%20ball%20with%20fingers%20and%20place%20onto%20parchment%20paper.%20%20These%20cookies%20do%20not%20spread%20out%20wide,%20so%20the%20dough%20can%20be%20pressed%20down%20slightly%20and%20a%20crinkle%20effect%20will%20be%20created%20as%20they%20bake.%3C/p%3E%3Cp%3EBake%20the%20cookies%20for%2012-14%20minutes,%20let%20cool%20slightly%20before%20removing%20and%20plating.%20%20Sprinkle%20powdered%20sugar%20to%20enhance%20the%20crinkles,%20or%20leave%20as%20is.%3C/p%3E%3Cp%3EMakes%203%20dozen%20cookies%20if%20using%20a%20teaspoon%20to%20measure%20out.%20%20Want%20larger%20cookies,%20double%20the%20teaspoon%20amount,%20or%20use%20a%20tablespoon%20to%20measure%20out%20the%20dough.%3C/p%3E%3Cp%3EBasically,%20I%20had%203%20dozen%20delicious%20red%20velvet%20cookies,%20with%20semi-sweet%20chocolate%20chips,%20baked%20and%20plated.%20%20I%20sprinkled%20half%20with%20powdered%20sugar,%20and%20the%20other%20half%20were%20left%20as%20is.%20%20The%20whole%20process%20took%2045%20minutes%20as%20I%20had%20only%20have%20two%20racks%20in%20my%20oven;%20if%20I%20had%20a%20third,%20the%20time%20would%20have%20been%2030%20minutes.%3C/p%3E%3Cp%3EHint:%20%20if%20you%20cannot%20decide%20what%20flavors%20of%20cake%20mix%20to%20purchase,%20stock%20up%20on%20%22White%22,%20then%20you%20can%20add%20cocoa%20powder%20to%20create%20chocolate;%20vanilla,%20lemon,%20peppermint%20or%20other%20flavors%20of%20extract%20as%20well.%20%20Consider%20the%20white%20cake%20mix%20to%20be%20a%20blank%20canvass,%20you're%20the%20artist,%20now%20create!%3C/p%3E%3Cp%3EMary%20Cokenour%3C/p%3E){kind=link}
