Ingredients

  • 1 tbsp. unsalted butter
  • 2 large, raw eggs, lightly beaten with a fork
  • 1/2 ounce finely shredded cheddar cheese (I use a microplane/zester to get a fine grate)
  • 1 tbsp. chopped onions
  • 1 small stalk of asparagus, washed, trimmed and thinly sliced
  • 1 tbsp. chopped, fresh, Italian parsley
