Ingredients
- 1 stick butter
- 2 (12 oz.) cans of Evaporated Milk
- 2 cans of water, poured into both emptied cans of the evaporated milk
- 1 and 1/4 cup sugar
- 12 tbsp. or 3/4 cup of cornstarch
- 1 bottle of Ground Cinnamon
- Store bought or homemade angel food cake and/or sponge cake and/or pound cake

%20%20As%20a%20child,%20I%20used%20to%20stare%20at%20this%20picture%20for%20hours,%20wondering%20what%20they%20were%20thinking%20as%20they%20looked%20into%20the%20lens%20of%20the%20camera.%20Looking%20at%20this%20picture%20as%20a%20middle-aged%20adult%20who%20is%20no%20longer%20a%20child,%20I%20see%20a%20couple%20who%20is%20about%20to%20embark%20on%20the%20greatest%20journey%20of%20their%20lives%20together%20as%20a%20military%20family.%3C/p%3E%3Cp%3EThey%20met%20on%20the%20tiny%20island%20of%20Guam,%20where%20both%20of%20them%20are%20from.%20Dad%20was%20in%20the%20U.S.%20Marines%20when%20they%20married.%20They%20relocated%20to%20the%20United%20States%20shortly%20after%20their%20wedding%20and%20a%20couple%20of%20years%20later,%20my%20father%20transferred%20over%20to%20the%20U.S.%20Army,%20where%20he%20retired%20as%20a%20First%20Sergeant.%3C/p%3E%3Cp%3EThroughout%20all%20our%20travels,%20my%20mother%20would%20always%20cook%20and%20bake%20dishes%20from%20her%20native%20island.%20%20It%20wasn't%20unusual%20for%20her%20to%20spend%20half%20the%20day%20in%20the%20kitchen,%20cooking%20up%20our%20favorite%20Chamorran%20(the%20name%20that%20describes%20everything%20Guam%20related)%20dishes%20for%20breakfast,%20lunch,%20dinner%20or%20*just%20cause.*%20%20I%20think%20it%20was%20her%20way%20of%20chasing%20away%20the%20homesickness.%3C/p%3E%3Cp%3EWhen%20I%20moved%20out%20on%20my%20own%20in%20my%20early%2020's,%20I%20made%20sure%20that%20I%20took%20copies%20of%20the%20recipes%20to%20some%20of%20her%20signature%20dishes%20that%20I%20learned%20to%20love.%3C/p%3E%3Cp%3ELatiya%20is%20one%20of%20them%20:)%3C/p%3E%3Cp%3EThis%20dessert%20is%20famous%20among%20the%20people%20of%20Guam.%20I%20LOVE%20it%20because%20it's%20like%20comfort%20food%20for%20me.%20Who%20can%20resist%20angel%20food%20cake/sponge%20cake%20with%20a%20tasty,%20creamy%20custard%20on%20top%20and%20cinnamon%20sprinkles%20to%20round%20it%20out??%3C/p%3E%3Cp%3EIt's%20great%20to%20make%20if%20you%20are%20having%20a%20barbecue%20or%20have%20been%20invited%20to%20a%20special%20event%20because%20it%20makes%20quite%20a%20lot.%3C/p%3E%3Cp%3EAll%20the%20credit%20goes%20to%20my%20mom%20when%20it%20comes%20to%20this%20recipe.%20%20She%20is%20the%20one%20who%20introduced%20this%20dish%20to%20us%20and%20in%20turn,%20I%20am%20introducing%20it%20to%20all%20of%20you%20;)%3C/p%3E%3Cp%3ECinnamon%20Custard%20Cake%20%7BLatiya%7D%3C/p%3E%3Cp%3E(serves%208-10)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20%20Cut%20the%20cake%20into%20squares%20and%20place%20them%20on%20a%20cookie%20sheet%20or%20in%20a%20baking%20pan.%3C/p%3E%3Cp%3E2.%20%20Melt%20butter%20in%20a%20pot%20and%20add%20milk.%20Add%20one%20of%20the%20cans%20of%20water.%20Bring%20to%20a%20boil.%20Lower%20the%20heat%20to%20medium.%3C/p%3E%3Cp%3E3.%20%20In%20a%20separate%20bowl,%20add%20the%20cornstarch%20and%20the%20second%20can%20of%20water.%20Mix%20thoroughly.%3C/p%3E%3Cp%3E4.%20%20Add%20the%20cornstarch%20mixture%20to%20the%20milk%20mixture%20and%20stir%20constantly.%20Add%20the%20sugar%20while%20stirring.%3C/p%3E%3Cp%3E5.%20%20Let%20this%20boil%20for%205%20minutes%20or%20until%20thickened.%20It%20may%20take%20a%20while%20to%20thicken,%20but%20it%20will%20:)%3C/p%3E%3Cp%3E6.%20%20Pour%20over%20the%20cake.%20%20Place%20in%20the%20fridge%20to%20chill%20for%20a%20few%20hours%20or%20over%20night.%3C/p%3E%3Cp%3E7.%20%20Sprinkle%20with%20enough%20cinnamon%20to%20decorate%20and%20serve.%3C/p%3E%3Cp%3ERecipe%20Source:%20My%20mama%20;)%3C/p%3E){kind=link}
