%20was%20a%20miracle.%20%23%E2%80%8EADHD%3C/p%3E%3Cp%3E(By%20the%20way,%20I%20bought%20all%20candles.%20All%20of%20them.%20Mike%20hates%20candles.)%3C/p%3E%3Cp%3E(Also,%20I%20am%20a%20water%20carafe%20person;%20alas,%20I%20decided%20too%20late.)%3C/p%3E%3Cp%3EC.%20Every%20time%20I've%20visited%20the%20Apple%20Store%20over%20the%20course%20of%2011+%20years%20of%20Mac%20ownership,%20my%20computer%20issues%20have%20been%20covered%20and%20fixed%20for%20free.%20Even%20though%20I%20never%20buy%20the%20warranty.%20Also,%20the%20Genius%20Bar%20people%20never%20say%20a%20disparaging%20word%20about%20my%20file-littered%20desktop,%20which%20is%20my%20electronic%20equivalent%20of%20a%20garbage%20dump.%20I%20appreciate%20these%20things.%3C/p%3E%3Cp%3ED.%20Last%20night%20I%20had%20my%20hip%20measurement%20yelled%20across%20a%20lululemon.%20I%20have%20dug%20a%20very,%20very%20deep%20hole%20that%20I%20will%20now%20hide%20in%20forever.%3C/p%3E%3Cp%3EE.%20The%20Cheesecake%20Factory%20vanilla%20bean%20cheesecake%20solves%20most%20problems.%20But%20not%20the%20lululemon%20one.%20Or%20the%20water%20carafe%20one.%20Okay,%20it%20solves%20nothing.%20But%20it%20does%20so%20with%20finesse,%20while%20tasting%20delicious.%3C/p%3E%3Cp%3EF.%20A%20healthy%20dinner%20is%20in%20order%20before%20eating%20two%20slices%20of%20said%20cheesecake%20(stop%20looking%20at%20me%20like%20that.)%20And%20now%20that%20my%20laptop%20is%20back%20from%20the%20laptop%20hospital%20in%20California,%20I%20can%20tell%20you%20all%20about%20this%20particular%20healthy%20dinner.%3C/p%3E%3Cp%3EThese%20twice-baked%20sweet%20potatoes%20pack%20a%20little%20kick!%20They're%20stuffed%20with%20a%20spicy%20chipotle%20mixture%20and%20topped%20with%20chipotle%20shrimp%20in%20a%20velvety%20sauce.%20This%20dish%20makes%20a%20delicious%20and%20filling%20dinner%20entr%C3%A9e.%20And%20it%20will%20never%20call%20out%20your%20hip%20measurement%20in%20a%20lululemon,%20because%20it%20knows%20better.%3C/p%3E%3Cp%3E2%20large%20sweet%20potatoes%20(look%20for%20ones%20that%20are%20shaped%20like%20a%20fat%20oval)%202%20tablespoons%20olive%20oil%201/2%20teaspoon%20cumin%201/2%20teaspoon%20chili%20powder%201%20teaspoon%20brown%20sugar%201/2%20teaspoon%20salt%202%20tablespoons%20butter%202%20tablespoons%20half%20&%20half%202%20tablespoon%20chopped%20chipotles%20in%20adobo%20sauce%202%20teaspoon%20of%20adobo%20sauce%20from%20can%201%20(7%20ounce)%20can%20chipotle%20peppers%20in%20adobo%20sauce,%20minus%20what%20was%20used%20above%203/4%20pound%20medium%20shrimp,%20deveined%20with%20tails%20and%20shells%20removed%202%20teaspoons%20minced%20garlic%202%20tablespoons%20olive%20oil%20salt%201%201/2%20tablespoons%20fresh%20lime%20juice%201%201/2%20tablespoons%20unsalted%20butter%20chopped%20cilantro%20and%20sour%20cream%20for%20garnish%3C/p%3E%3Cp%3EBake%20the%20sweet%20potatoes%20once:%20Preheat%20the%20oven%20to%20400%20degrees%20F%20and%20cover%20a%20baking%20sheet%20with%20foil.%20Poke%20each%20sweet%20potato%205-6%20times%20with%20a%20fork%20and%20rub%20them%20with%20olive%20oil.%20Bake%20for%201%20hour%20or%20until%20a%20knife%20poked%20into%20them%20meets%20no%20resistance.%20While%20they%20bake,%20mix%20the%20cumin,%20chili%20powder,%20brown%20sugar,%20and%20salt.%20Bake%20%E2%80%98em%20twice:%20Let%20the%20baked%20sweet%20potatoes%20cool%20for%2010%20minutes%20before%20slicing%20the%20top%20third%20off%20of%20each.%20Use%20a%20spoon%20to%20carefully%20scoop%20out%20the%20flesh%20(leave%20about%201/8%20inch%20of%20flesh%20in%20the%20skin%20to%20give%20it%20some%20sturdiness).%20Mix%20the%20sweet%20potato%20flesh%20in%20a%20medium%20bowl%20with%20the%20butter,%20half%20and%20half,%20spice%20mixture,%20chopped%20chipotles,%20and%20adobo%20sauce.%20Return%20the%20mixture%20to%20the%20potatoes%20(At%20this%20point%20you%20can%20cover%20the%20potatoes%20and%20refrigerate%20overnight%20if%20you%20wish.%20If%20you%20do,%20just%20let%20them%20come%20to%20room%20temperature%20before%20you%20bake%20them%20the%20next%20day.)%20Return%20the%20potatoes%20to%20the%20oven%20for%2010%20more%20minutes.%20Make%20the%20chipotle%20shrimp:%20While%20the%20potatoes%20enjoy%20their%20second%20round%20in%20the%20oven,%20process%20the%20chipotle%20peppers%20and%20sauce%20in%20a%20food%20processor%20until%20smooth.%20Place%20the%20puree,%20shrimp,%20and%20garlic%20together%20in%20a%20zip-top%20bag%20and%20gently%20work%20the%20bag%20around%20until%20the%20shrimp%20are%20well%20coated.%20Place%20the%20shrimp%20in%20the%20refrigerator%20for%2020%20minutes%20to%20marinate.%20Heat%20the%20olive%20oil%20in%20a%20large%20skillet%20over%20medium%20heat%20until%20it%20shimmers.%20Add%20the%20shrimp%20and%20sauce%20to%20the%20pan%20and%20sprinkle%20with%20salt%20and%20the%20lime%20juice.%20Cook%20for%20around%204%20minutes,%20tossing%20the%20shrimp%20as%20needed,%20until%20the%20shrimp%20are%20cooked%20through.%20Remove%20from%20the%20heat%20and%20gently%20mix%20in%20the%20butter.%20Remove%20the%20twice-baked%20sweet%20pota
