Sweet Potato Black Bean Tostadas Recipe

This is an easy weeknight supper that can be partially prepared ahead of time. I love the ying and yang of the sweet potatoes and chipotle peppers. Go easy on the cheese and it is very friendly for the waistline.

Directions

  1. Mix mashed sweet potatoes, chipotle peppers, and cilantro in medium bowl.
  2. Heat oil in large skillet.
  3. Add onions and saute until soft.
  4. Add garlic and saute 30 seconds.
  5. Add beans, chili powder, cumin, oregano, and soy sauce.
  6. Cook until heated through and fragrant, approx. 1 minute.
  7. Add 1 tablespoon water and cook 1 additional minute.
  8. Remove from heat and preheat broiler.
  9. Spray tortillas on both sides with cooking spray and place on baking sheet. (Cook 2 at a time)
  10. Spread desired amount of sweet potato mixture on each tortilla. top with 1/4 of bean mixture and 1/4 of cheese.
  11. Broil 2-3 minutes, until cheese is melted and tortilla is lightly browned around edges.
  12. Top with cilantro and serve.
