Ingredients
- adapted from Bacon Butter Cheese & Garlic
- Chicken:
- 5-6 boneless, skinless chicken breasts
- salt
- pepper
- garlic powder
- onion powder
- 6 ounces mozzarella cheese, sliced
- Mushrooms:
- 8 ounces mushrooms, sliced
- 2 Tb butter
- 2 large cloves garlic, minced
- 1/2 C water mixed with 1 Tb white wine vinegar (or 1/2 C white wine)
- salt and pepper to taste
- Spinach:
- 10 - 12 ounce bag of spinach leaves
- 4 ounces cream cheese
- 1/4 C shredded parmesan cheese
- 2 large cloves of garlic, minced
- 1/2 onion, chopped
- 2 Tb oil
- salt and pepper to taste

%20but%20without%20offending%20my%20previous%20bakes,%20this%20is%20easily%20my%20new%20favorite.%20%20Yes,%20it%20does%20take%20a%20bit%20more%20effort%20than%20some%20of%20my%20other%20bakes,%20but%20you%20will%20not%20be%20disappointed.%20%20This%20one%20immediately%20made%20it's%20way%20into%20the%20meal%20rotation,%20especially%20since%20I%20successfully%20made%20it%20without%20turning%20it%20into%20charcoal.%3C/p%3E%3Cp%3ECheesy%20Spinach%20&%20Mushroom%20Chicken%20Bake%3C/p%3E%3Cp%3E1.%20%20Preheat%20oven%20to%20350%20degrees.%20%20Spray%209x13%20casserole%20with%20nonstick%20spray.%20%20Generously%20season%20the%20chicken%20with%20salt,%20pepper,%20garlic%20&%20onion%20powder.%20%20Place%20in%20the%20casserole,%20skin%20side%20down%20and%20bake%20for%2016%20minutes.%3C/p%3E%3Cp%3E2.%20%20While%20the%20bakes,%20prepare%20the%20mushrooms%20and%20spinach.%20%20In%20a%20large%20skillet%20over%20medium%20high%20heat,%20melt%20the%20butter%20then%20add%20the%20mushrooms.%20%20Cook%20until%20the%20mushrooms%20are%20browned%20all%20over.%20%20Don't%20add%20the%20salt%20before%20they%20brown,%20or%20they%20won't%20brown%20at%20all!%20%20Add%20the%20garlic%20once%20the%20mushrooms%20are%20browned%20and%20cook%20for%201%20minute,%20then%20deglaze%20the%20pan%20with%20the%20water/vinegar%20mixture.%20%20Add%20salt%20and%20pepper%20to%20taste%20then%20allow%20it%20to%20reduce%20until%20most,%20but%20not%20all%20of%20the%20liquid%20is%20gone.%20%20Remove%20mixture%20from%20the%20pan%20into%20a%20bowl%20and%20set%20aside%20until%20the%20spinach%20is%20finished.%3C/p%3E%3Cp%3E3.%20%20Using%20the%20same%20skillet,%20add%20the%20oil%20and%20onion%20over%20medium%20high%20heat%20for%203%20minutes.%20%20Add%20the%20garlic,%20cook%20for%201%20minute%20then%20add%20the%20spinach%20in%20batches.%20%20It%20will%20shrink%20down%20as%20it%20cooks.%20%20Once%20all%20the%20spinach%20has%20been%20added%20and%20cooked%20down,%20stir%20in%20the%20cream%20cheese,%20parmesan,%20salt%20and%20pepper%20until%20they%20melt%20and%20mix%20together.%20%20Add%20in%20the%20set%20aside%20mushrooms%20and%20stir.%3C/p%3E%3Cp%3E4.%20%20Remove%20chicken%20from%20the%20oven%20and%20flip%20over%20so%20the%20skin%20side%20is%20now%20up.%20%20Slather%20on%20the%20spinach/mushroom%20mixture%20evenly%20over%20the%20top%20of%20the%20chicken.%20%20Lay%20the%20sliced%20mozzarella%20cheese%20evenly%20over%20the%20top%20and%20return%20to%20the%20oven%20for%2012-14%20minutes%20more%20or%20until%20the%20chicken%20is%20cooked%20through.%3C/p%3E){kind=link}
