Cheese and Potato Pierogis Recipe

Ingredients

  • 1 large egg, lightly beaten
  • 2 tablespoons sour cream
  • 1 cup whole milk
  • 1 cup water
  • ½ teaspoon salt
  • 5 cups all purpose flour, plus more for kneading and dusting
  • For the filling:
  • 4 lbs Yukon gold potatoes, peeled and cut into 1 ½-inch chunks
  • 4 ounces room temperature cream cheese
  • 4 ounces grated extra sharp cheddar cheese
  • 3 tablespoons butter
  • Salt, to taste
  • Cornmeal, for sprinkling
  • Serving suggestions: brown butter, yellow onions sautéed in butter
