Ingredients
- 1 1/2 cups self-rising flour
- 1 1/4 cups all purpose flour
- 1 cup unsalted butter, softened at room temperture
- 2 cups sugar
- 4 large eggs, at room tempture
- 1 cup milk
- 2 teaspoon vanilla extract
- Icing:
- 2 sticks unsalted butter, softened
- 5 cups confectioners sugar, sifted
- 1 1/2 cups firmly packed light brown sugar
- 1/2 cup milk
- 2 tablespoons dark corn syrup
- 2 teaspoons vanilla extract
- Garnish:
- 2 cups coarsely chopped toasted pecans

%20and%20have%20been%20trying%20to%20do%20things%20to%20fill%20my%20days%20since.%20%20Being%20unemployed,%20the%20job%20hunt%20always%20continues,%20but%20you%20can't%20do%20that%20all%20the%20time!%20%20My%20new%20roommate%20Rachel%20and%20I%20took%20a%20stroll%20around%20Green%20Lake...%20but%20don't%20ask%20me%20to%20tell%20what%20district%20it's%20in,%20I'm%20just%20getting%20a%20hang%20of%20that%20stuff!%20%20But%20then%20we%20went%20to%20this%20wonderful%20vegetarian%20restaurant%20%22Cafe%20Flora.%22%20%20It%20is%20decorated%20so%20serenely;%20the%20center%20of%20one%20room%20has%20a%20small%20rock%20garden/waterfall%20complete%20with%20a%20bonsai%20tree%20while%20the%20walls%20are%20lined%20with%20bamboo.%20%20The%20other%20room,%20which%20features%20the%20bar,%20was%20a%20little%20more%20lively.%20%20But%20both%20sides%20serve%20their%20wonderful%20food.%20%20Now,%20you're%20talking%20to%20someone%20who%20would%20ask%20to%20eat%20at%20Seva%20(an%20Ann%20Arbor%20vegetarian%20restaurant)%20every%20chance%20they%20got.%20%20So%20it%20means%20a%20lot%20when%20I%20say%20this%20place%20was%20better%20than%20Seva!%20%20The%20didn't%20have%20as%20wide%20of%20a%20range%20of%20dishes,%20but%20everything%20they%20make%20they%20appears%20to%20be%20made%20perfectly.%20%20I%20personally%20got%20the%20black%20bean%20burger%20with%20caramelized%20onions%20with%20a%20side%20of%20yam%20fries.%20%20I%20would%20give%20it%20a%204.5%20out%20of%205%20stars.%20%20The%20only%20reason%20it%20doesn't%20get%20five%20stars%20is%20because%20I%20have%20yet%20to%20eat%20something%20so%20good%20it%20literally%20knocks%20me%20off%20my%20seat.%20%20But%20the%20burger...%20it%20has%20the%20perfect%20balance%20of%20flavor%20and%20spice.%20%20It%20was%20spicy%20enough%20for%20me,%20but%20not%20so%20spicy%20that%20the%20flavors%20of%20the%20black%20beans%20and%20onions%20couldn't%20shine%20through.%20%20I'm%20exited%20to%20go%20back%20and%20try%20other%20dishes.%3C/p%3E%3Cp%3EBut%20you're%20not%20here%20for%20%20restaurant%20review...%20maybe%20you%20are...%20but%20the%20point%20of%20this%20post%20is%20cake!%20%20Lots%20of%20cake%20for%20a%20wonderful%20person%20-%20my%20Grandma!%20%20As%20I%20was%20moving%20(erm...%20now%20moved)%20to%20Seattle,%20I%20wouldn't%20be%20able%20to%20celebrate%20my%20Grandma's%20birthday%20on%20her%20actual%20birthday,%20so%20we%20surprised%20her%20with%20a%20party%20a%20month%20before%20hand!%20%20As%20seen%20in%20a%20previous%20post,%20I%20made%20her%20cards,%20my%20sister%20gave%20her%20a%20book%20and%20a%20bookmark%20that%20she%20made%20and%20my%20mom%20presented%20her%20with%20a%20wind%20spinner%20she%20bought%20from%20the%20Ann%20Arbor%20Art%20Fair.%20%20It%20was%20so%20nice%20to%20see%20someone%20so%20surprised%20and%20happy!%20%20In%20my%20opinion,%20one%20of%20the%20best%20parts%20was%20the%20cake%20I%20also%20surprised%20her%20with.%3C/p%3E%3Cp%3EIt's%20from%20my%20new%20cookbook%20%22More%20from%20Magnolia%22%20(looking%20back,%20it's%20ironic%20because%20I%20now%20live%20in%20Magnolia)%20that%20I%20purchased%20from%20the%20Magnolia%20Bakery%20in%20New%20York%20City%20when%20I%20was%20there%20in%20early%20July.%20%20I%20flipped%20though%20all%20the%20recipes%20and%20my%20mom%20and%20I%20decided%20a%20Caramel%20Pecan%20Layer%20Cake%20would%20be%20the%20best%20one%20for%20her.%20%20She,%20and%20my%20mom,%20love%20caramel.%20%20And%20toasted%20pecans.%20%20And%20cake.%20%20And%20cake%20in%20layers.%20%20Obviously,%20there%20were%20no%20objections.%20%20The%20cake%20was%20easy%20to%20make%20and%20better%20yet%20you%20had%20to%20make%20the%20frosting%20beforehand!%3C/p%3E%3Cp%3ECaramel%20Pecan%20Layer%20Cake%3C/p%3E%3Cp%3EAdapted%20from:%20More%20from%20Magnolia%3C/p%3E%3Cp%3ECake:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EToast%20the%20pecans,%20place%20on%20a%20baking%20sheet%20in%20a%20350-degree%20oven%20for%2015%20minutes...%20or%20until%20your%20whole%20house%20smells%20like%20pecans.%20%20Keep%20oven%20at%20350-degrees.%3C/p%3E%3Cp%3ELine%20two%2010-inch%20spring%20form%20baking%20pans%20and%20grease.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20the%20flours%20then%20set%20aside.%20%20In%20a%20large%20bowl,%20on%20the%20medium%20speed%20of%20an%20electric%20mixer,%20cream%20the%20butter%20until%20smooth.%3C/p%3E%3Cp%3EAdd%20the%20sugar%20gradually%20and%20beat%20until%20fluffy%20(3+%20minutes).%20%20Add%20the%20eggs%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20%20Add%20the%20dry%20ingredients,%20beat%20until%20all%20the%20ingredients%20are%20incorporated...%20but%20take%20caution%20to%20NOT%20over%20beat%20(this%20will%20create%20gluten%20and%20make%20the%20cake%20tough).%20%20Scrape%20down%20batter%20into%20the%20bowl,%20making%20sure%20all%20the%20ingredients%20are%20incorporated.%3C/p%3E%3Cp%3EDivide%20the%20batter%20among%20the%20prepared%20pans%20and%20bake%20for%2025-30%20minutes,%20or%20until%20a%20toothpick%20comes%20out%20clean%20when%20inserted%20into%20the%20center%20of%20the%20cake.%20%20Let%20the%20layers%20cools%20in%20the%20pans%20for%20one%20hour.%3C/p%3E%3Cp%3EWhen%20the%20layers%20have%20cooled%20completely,%20ice%20the%20cake%20(recipe%20below).%3C/p%3E%3Cp%3ECaramel%20Frosting%20Directions:%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20on%20the%20medium%20speed%20on%20an%20electric%20mixer,%20cream%20the%20butter%20until%20smooth.%3C/p%3E%3Cp%3EAdd%20the%20sugars%20and%20beat%20on%20low%20speed%20for%202%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20milk,%20syrup,%20and%20vanilla,%20and%20beat%20until%20smooth%20and%20creamy,%203-5%20minutes.%20%20Store%20covered,%20at%20room%20temperature,%20overnight%20or%20up%20to%202%20days.%3C/p%3E){kind=link}
