Baked Falafel with a Spicy Moroccan Sauce (in a muffin pan!!)

This month’s theme for Progressive Eats is anything that can be made in a muffin tin. This could have been my opportunity to make muffins. God knows I’m due. In the nearly 5 years I’ve had this blog going, I’ve not posted one single muffin. Kind of shocking in the food blogging world. Likewise, and my husband really doesn’t understand this, I’ve never posted cupcakes. But they’re vegetarian, he’s complained more than once.

%3C/p%3E%3Cp%3EMay%2030,%202016Leave%20a%20Comment%3C/p%3E%3Cp%3EThis%20month%E2%80%99s%20theme%20for%20Progressive%20Eats%20is%20anything%20that%20can%20be%20made%20in%20a%20muffin%20tin.%20This%20could%20have%20been%20my%20opportunity%20to%20make%20muffins.%20God%20knows%20I%E2%80%99m%20due.%20In%20the%20nearly%205%20years%20I%E2%80%99ve%20had%20this%20blog%20going,%20I%E2%80%99ve%20not%20posted%20one%20single%20muffin.%20Kind%20of%20shocking%20in%20the%20food%20blogging%20world.%20Likewise,%20and%20my%20husband%20really%20doesn%E2%80%99t%20understand%20this,%20I%E2%80%99ve%20never%20posted%20cupcakes.%20But%20they%E2%80%99re%20vegetarian,%20he%E2%80%99s%20complained%20more%20than%20once.%3C/p%3E%3Cp%3EIn%20truth,%20you%20might%20never%20see%20cupcakes%20here.%20Trust%20me%20when%20I%20say%20that%20my%20cake%20decorating%20skills%20will%20never%20inspire%20any%20of%20you%20to%20do%20anything%20except%20take%20up%20a%20collection%20to%20send%20me%20to%20cake%20decorating%20school.%20Certainly,%20I%20won%E2%80%99t%20be%20motivating%20any%20of%20you%20to%20head%20to%20the%20kitchen%20to%20bake%20up%20a%20batch%20of%20your%20own.%20There%E2%80%99s%20a%20reason%20I%20post%20rustic,%20country-style%20cakes,%20like%20my%20Summer%20Peach%20Cake.%3C/p%3E%3Cp%3EI%20promise%20a%20muffin%20recipe%20soon%20%E2%80%93%20I%E2%80%99m%20doing%20a%20lot%20of%20experimenting%20with%20Einkorn%20flour%20these%20days%20%E2%80%93%20an%20ancient%20non-hybridized%20wheat.%3C/p%3E%3Cp%3EAnd%20muffins%20are%20so%20wonderful%20packed%20with%20summer%20fruit.%20But%20for%20now,%20I%20have%20falafel%20balls%20baked%20in%20a%20muffin%20tin,%20with%20a%20spicy%20sauce.%20We%E2%80%99re%20a%20creative%20group%20at%20Progressive%20Eats,%20and%20I%20wanted%20to%20hold%20up%20my%20end%20of%20the%20bargain.%3C/p%3E%3Cp%3EFalafel%20is%20usually%20fried%20%E2%80%93%20it%E2%80%99s%20how%20you%20get%20a%20crispy%20exterior,%20while%20the%20insides%20remain%20tender.%20But%20I%20don%E2%80%99t%20really%20do%20fried.%20So%20I%20baked%20them.%20Mine%20weren%E2%80%99t%20crispy,%20to%20be%20honest.%20They%20were%20very%20tender,%20inside%20and%20out,%20so%20I%20need%20to%20do%20more%20experimenting.%20But%20their%20flavor%20was%20really%20wonderful!%20When%20I%20get%20a%20crispy%20exterior,%20I%E2%80%99ll%20update%20this%20recipe%20pronto.%20Until%20then,%20this%20is%20a%20great%20recipe%20for%20flavorful%20tender%20falafel.%3C/p%3E%3Cp%3EBaked%20Falafel%20with%20a%20Spicy%20Moroccan%20Sauce%20(in%20a%20muffin%20pan!!)%20%20%20%20%20%20%20%20Author:%20Susan%20Pridmore%20Recipe%20type:%20Vegetarian%20Appetizer%20or%20Main%20Serves:%2012%20falafel%20balls%20%20%20Ingredients%20Falafel%3C/p%3E%3Cp%3E1%20cup%20dried%20chickpeas%202%20tablespoons%20extra-virgin%20olive%20oil,%20divided%20%C2%BD%20cup%20packed%20fresh%20cilantro,%20coarsely%20chopped%20%C2%BD%20cup%20packed%20fresh%20mint%20leaves%201%C2%BD%20teaspoons%20fresh%20lemon%20juice%20%C2%BC%20cup%20diced%20red%20onion%202%20garlic%20cloves%20%C2%BE%20teaspoon%20kosher%20salt%20%C2%BD%20teaspoon%20ground%20coriander%20%C2%BD%20teaspoon%20ground%20cumin%20%C2%BD%20teaspoon%20baking%20soda%20%E2%85%9B%20teaspoon%20ground%20cayenne%20pepper%20%E2%85%9B%20teaspoon%20ground%20black%20pepper%20Spicy%20Moroccan%20Sauce%3C/p%3E%3Cp%3E1%20medium%20red%20sweet%20pepper%201%20cup%20cherry%20tomatoes,%20halved%202%20tablespoons%20extra-virgin%20olive%20oil%203%20pitted%20whole%20unsweetened%20dates%20%C2%BC%20cup%20boiling%20water%201%20tablespoon%20tomato%20paste%203%20cloves%20garlic,%20minced%20%C2%BD%20teaspoon%20kosher%20salt%20%C2%BC%20teaspoon%20ground%20coriander%20%C2%BC%20teaspoon%20ground%20cayenne%20pepper%20%C2%BC%20teaspoon%20ground%20ras-el-hanout%20spice%20%20%20Instructions%20Falafel%3C/p%3E%3Cp%3EPlace%20the%20chickpeas%20in%20a%20pot%20and%20cover%20them%20with%20water.%20Bring%20the%20water%20to%20a%20boil%20over%20medium-high%20heat.%20and%20reduce%20to%20a%20simmer.%20Simmer%20for%202%20minutes,%20remove%20from%20the%20heat,%20cover,%20and%20soak%20the%20beans%20overnight.%20Drain.%20At%20this%20point%20they%20should%20be%20soft%20enough%20to%20be%20easily%20chopped%20by%20a%20food%20processor.%20Preheat%20the%20oven%20to%20375%CB%9A%20F,%20and%20brush%20a%20muffin%20pan%20with%20olive%20oil%20(or%20line%20with%20paper%20muffin%20cups).%20Put%20the%20chickpeas%20in%20the%20bowl%20of%20a%20food%20processor%20fitted%20with%20a%20blade%20and%20pulse%20until%20coarsely%20ground.%20Add%20in%20the%20remaining%20Falafel%20ingredients%20and%20continue%20to%20pulse%20until%20the%20chickpeas%20are%20finely%20ground.%20You%20should%20be%20able%20to%20gather%20the%20mixture%20together%20into%20a%20ball.%20If%20you%20can't,%20continue%20to%20pulse%20until%20you%20can.%20Roll%202%20tablespoons%20of%20the%20falafel%20mix%20into%20a%20ball%20and%20place%20in%20a%20muffin%20cup.%20Continue%20with%20the%20remaining%20mix.%20You%20should%20end%20up%20with%2012%20balls.%20Brush%20each%20with%20a%20little%20ol
