- 1 small Persian cucumber (peeled and seed and cut into 1/8-inch dice)
- ½ cup dill pickle cut into 1/8-inch dice
- ½ cup minced flat leaf parsley
- 1 teaspoon dill pickle brine
- 3/4 cup extra-virgin olive oil (plus more for brushing )
- kosher salt (as needed for seasoning)
- 3/4-1 pound meaty mushroom (cut into 20 bite-size chunks)
- 10 strips bacon (halved lengthwise)
- lemon wedges (for serving)

%20and%20Tomales%20Bay%20for%20oysters.%20It%20will%20be%20a%20marvelous%20introduction%20to%20this%20rather%20remote%20area%20of%20California.%3C/p%3E%3Cp%3EI%E2%80%99ve%20seen%20photos%20of%20Mendocino%E2%80%99s%20windswept%20cottages%20perched%20on%20jagged%20bluffs.%20The%20images%20strike%20me%20as%20rather%20dramatic.%20Especially%20since%20the%20mood%20is%20famously%20mellow%20on%20the%20Coast%E2%80%93%20as%20it%E2%80%99s%20known%20to%20locals.%3C/p%3E%3Cp%3EI%E2%80%99m%20curious%20how%20they%20meld%20the%20dramatic%20with%20the%20mellow.%20Then%20again,%20maybe%20the%20dichotomy%20is%20just%20part%20of%20the%20allure.%20After%20all,%20the%20coast%20in%20Mendocino%20is%20wild%20and%20rugged.%20The%20waves%20beat%20relentlessly%20on%20the%20rocks.%20Just%20inland%20however,%20quiet%20forests%20of%20giant%20redwoods%20have%20been%20keeping%20the%20area%E2%80%99s%20secrets%20for%20centuries.%3C/p%3E%3Cp%3EIt%E2%80%99s%20a%20great%20time%20to%20visit%20Mendocino%20too.%20The%20grape%20harvest%20is%20in,%20and%20autumn%20offers%20some%20of%20the%20best%20weather%20of%20the%20year.%20It%E2%80%99s%20California%20at%20its%20best.%20It%E2%80%99s%20also%20smack-dab%20in%20the%20middle%20of%20the%20Mendocino%20Beer,%20Wine%20&%20Mushroom%20Festival%20(November%207-16,%202014).%20It%20may%20be%20my%20birthday,%20but%20I%20have%20a%20feeling%20the%20Mushroom%20Festival%20is%20the%20more%20likely%20reason%20I%E2%80%99ve%20been%20invited%20to%20Visit%20Mendocino.%20Either%20way,%20I%20can%E2%80%99t%20think%20of%20anything%20I%E2%80%99d%20like%20better%20on%20my%20birthday,%20than%20freshly%20foraged%20mushrooms.%3C/p%3E%3Cp%3EDespite%20its%20reputation%20for%20counterculture%20eccentricities,%20Mendocino%20is%20a%20real%20culinary%20destination%20and%20I%E2%80%99m%20excited%20to%20check%20that%20out%20too.%20Local%20produce,%20handcrafted%20foods%20(including%20beer%20and%20wine)%20and%20of%20course%20great%20restaurants.%20The%20kind%20of%20places%20that%20could%20only%20exist%20in%20a%20part%20of%20California%20that%E2%80%99s%20been%20going%20its%20own%20way%20for%20quite%20some%20time.%20Chef%20Patrick%20Meany%20(Stone%20&%20Embers)%20summed%20up%20this%20philosophy%20of%20fierce%20independence%20nicely%20when%20he%20said%20of%20his%20own%20restaurant%E2%80%99s%20menu,%20%E2%80%9CEverything%20we%20need%20we%20can%20find%20in%20a%20neighbor%E2%80%99s%20backyard.%E2%80%9D%3C/p%3E%3Cp%3EWith%20that%20dichotomy%20in%20mind,%20we%E2%80%99ve%20opted%20to%20divide%20our%20time%20between%20both%20rugged%20coast%20and%20the%20quiet%20wine%20country%20near%20Philo.%20We%E2%80%99ll%20be%20staying%20at%20The%20Little%20River%20Inn%20and%20The%20Madrones.%20I%E2%80%99m%20only%20going%20to%20tease%20you%20here%20with%20a%20couple%20of%20photos%20from%20the%20websites%20of%20these%20hotels.%20I%20haven%E2%80%99t%20been%20yet,%20and%20I%E2%80%99m%20trying%20to%20keep%20all%20that%E2%80%99s%20special%20about%20these%20places%20a%20mystery%20even%20to%20myself.%20I%20will%20say%20that%20the%20oceanfront%20Little%20River%20Inn%20is%20planning%20their%20Seventh%20Annual%20Mushroom%20&%20Beer%20Dinner%20(November%2014%20@%206:30%20pm%20%E2%80%93%209:30%20pm).%20If%20you%E2%80%99re%20in%20the%20area%20you%20can%20expect%20a%20multi-course%20meal%20featuring%20loads%20of%20local%20mushrooms%20paired%20with%20Russian%20River%20Brewing%20Company%20and%20Anderson%20Valley%20Brewing%20beers.%3C/p%3E%3Cp%3EAs%20for%20The%20Madrones,%20they%20describe%20themselves%20as:%20%E2%80%9CNot%20a%20B%20&%20B%20or%20a%20hotel%E2%80%9D%20but%20rather%20%E2%80%9Cprivate%20Estate%20Guest%20Quarters%E2%80%9D%20that%20are%20the%20extension%20of%20their%20home.%20There%20are%20four%20tasting%20rooms%20from%20four%20different%20wineries,%20right%20on%20the%20property.%20So,%20they%E2%80%99re%20right%20about%20that.%20I%20should%20feel%20right%20at%20home.%3C/p%3E%3Cp%3EAfter%20all,%20Mendocino%20grows%20the%20largest%20variety%20of%20grapes%20in%20the%20United%20States.%20I%E2%80%99m%20sure%20there%20are%20tasting%20rooms%20everywhere.%20I%E2%80%99m%20particularly%20interested%20and%20the%20brand%20new%20digs%20at%20Lula%20Cellars.%3C/p%3E%3Cp%3EBacon-Wrapped%20Mushrooms%3C/p%3E%3Cp%3EBut%20next%20week%20is%20next%20week.%20All%20this%20talk%20of%20mushrooms%20has%20made%20me%20hungry.%20Which%20is%20appropriate%20because%20we%20started%20this%20conversation%20with%20a%20recipe%20for%20Grilled%20Bacon-Wrapped%20Mushrooms.%20You%20can%20use%20any%20dense,%20meaty%20mushroom%20you%E2%80%99d%20like%20for%20this%20recipe,%20including%20Mendocino%E2%80%99s%20famed%20Candy%20Cap.%20I%20chose%20chanterelles%20because%20I%E2%80%99d%20heard%20through%20the%20mushroom%20vine%20that%20the%20rain%20we%20had%20last%20week%20means%20chanterelles%20are%20starting%20their%20season.%20But%20I%20guess%20I%E2%80%99ll%20just%20have%20to%20go%20up%20there%20to%20find%20out.%20GREG%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20toss%20
