Ingredients
- 3/4 lb minced clams, fresh from the fish market, with their liquid (or 2 5-oz cans of chopped clams, with their liquid)
- 8 slices bacon, diced
- 1 onion, diced
- 2 ribs celery, diced
- 1 cup grated peeled baking potato
- 2 cups half-and-half (do not use fat-free)
- 1/2 cup dry white wine
- 1 bay leaf
- 1 Tbsp fresh thyme leaves, or 1/2 Tbsp dried thyme
- 1 can (345 ml) evaporated milk
- 1 lb mixed fish or shellfish (I use salmon, cod and lobster tail, in equal amounts), cut into chunks
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 tsp each kosher salt and fresh black pepper, or more to taste
