Ingredients
- 3 c. sugar
- 3/4 c. water
- 3/4 c. light corn syrup
- 1 pkt apricot flavored gelatin (3 ounce.)
- 2 x egg whites
Directions
- Combine first 3 ingredients in a 3-qt saucepan; cook over low heat, stirring constantly, till sugar dissolves. Cook over high heat, without stirring, till mix reaches hard ball stage (260i).
- Combine gelatin and egg whites (at room temperature) in a large mixing bowl; heat till stiff peaks form. Pour warm sugar mix in a very thin stream over egg whites while beating constantly at high speed of an electric mixer. Continue beating till mix holds its shape (5 - 10 min). Drop quickly by teaspoonfuls onto waxed paper; cold.
