What started out as a two week blogging break (I was behind on several projects) turned into a two month hiatus away from my computer and I haven’t posted since the beginning of March. Where the time went I don’t know, and the summer just gets busier, but I miss visiting my favorite blogs and decided to get a few minutes in here and there and try to stay in touch with friends. I don’t cook on a regular basis any more. When I’m home by myself dinner is often a salad and something easy like avocado toast or a Marie Callender’s chicken pot pie. In the future I will share fewer recipes, ones I think are especially good, and will focus more on what going on at our beautiful North Oregon Coast.

%20%20turned%20into%20a%20two%20month%20hiatus%20away%20from%20my%20computer%20and%20I%20haven%E2%80%99t%20posted%20since%20the%20beginning%20of%20March.%20%20Where%20the%20time%20went%20I%20don%E2%80%99t%20know,%20and%20the%20summer%20just%20gets%20busier,%20but%20I%20%20miss%20visiting%20my%20favorite%20blogs%20and%20decided%20to%20get%20a%20few%20minutes%20in%20here%20and%20there%20and%20try%20to%20stay%20in%20touch%20with%20friends.%20%20I%20don%E2%80%99t%20cook%20on%20a%20regular%20basis%20any%20more.%20%20When%20I%E2%80%99m%20home%20by%20myself%20dinner%20is%20often%20a%20salad%20and%20something%20easy%20like%20avocado%20toast%20or%20a%20Marie%20Callender%E2%80%99s%20chicken%20pot%20pie.%20%20In%20the%20future%20I%20will%20share%20fewer%20recipes,%20ones%20I%20think%20are%20especially%20good,%20and%20will%20focus%20more%20on%20what%20going%20on%20at%20our%20beautiful%20North%20Oregon%20Coast.%3C/p%3E%3Cp%3EI%20have%20a%20few%20containers%20of%20last%20summer%E2%80%99s%20applesauce%20in%20the%20freezer%20and%20I%20thawed%20one%20out%20for%20this%20wonderful%20apple%20oatmeal%20cake.%20It%E2%80%99s%20a%20favorite%20recipe%20because%20of%20its%20intense%20apple%20flavor%20and%20the%20texture%20it%20gets%20from%20rolled%20oats%20and%20coconut%20and%20nuts%20in%20the%20broiled%20frosting.%20%20It%20keeps%20well,%20stays%20nice%20and%20moist,%20and%20travels%20well%20to%20the%20beach%20or%20to%20favorite%20camping%20or%20picnic%20spots.%20The%20addition%20of%20Bob%E2%80%99s%20Red%20Mill%20diced%20dried%20apples%20is%20my%20own%20addition.%20%20It%20gives%20the%20cake%20an%20extra%20apple%20flavor%20punch%20%20and%20keeps%20the%20cake%20nice%20and%20moist.%20These%20dried%20apple%20bits%20are%20one%20of%20my%20favorite%20baking%20ingredients%20%20%20Reconstitute%201/2%20cup%20dried%20apples%20in%201/4%20cup%20warm%20water%20or%20apple%20juice%20before%20adding%20them%20to%20the%20cake.%20Rum%20is%20even%20better.%20%20You%20can%E2%80%99t%20taste%20it%20but%20it%20intensifies%20the%20other%20flavors%20in%20the%20cake.%20%20Be%20sure%20to%20reconstitute%20the%20dried%20apples.%20%20Otherwise%20they%20absorb%20a%20lot%20of%20moisture%20in%20the%20dough%20and%20it%20becomes%20dry%20once%20its%20baked.I%20have%20a%20new%203-1/2%20month%20old%20grandson,%20Dodson%20Dean,%20%20He%E2%80%99s%20twelve%20pound%20of%20personality-plus%20and%20is%20the%20happiest%20baby%20you%20could%20ever%20find.%20%20He%20rolled%20over%20for%20the%20first%20time%20on%20Mother%E2%80%99s%20Day.%20%20Did%20I%20mention%20he%20is%20smart%20too!!!!!%20His%20mommy%20and%20daddy%20were%20very%20excited.%3C/p%3E%3Cp%3EThe%20Beaverton%20Farmers%E2%80%99%20Market%20opened%20for%20the%20summer%20last%20Saturday.%20%20I%E2%80%99m%20not%20a%20vendor%20anymore%20but%20I%20love%20to%20attend%20to%20see%20my%20vendor%20and%20customer%20friends%20again.%20%20I%E2%80%99m%20enjoying%20being%20the%20customer%20and%20not%20the%20person%20who%20has%20to%20get%20up%20at%204:00%20am%20on%20Saturday%20mornings%20to%20set%20up%20my%20booth%20for%20the%20day.%20%20I%20was%20a%20vendor%20there%20for%2012%20years%20and%20I%20loved%20almost%20every%20minute%20of%20it.%20Rainy%20days%20weren%E2%80%99t%20my%20favorite.My%20backyard%20is%20at%20its%20best%20in%20early%20summer.%20%20Portland%20is%20called%20%E2%80%9CThe%20City%20of%20Roses%E2%80%9D%20for%20a%20reason.%20We%20have%20had%20a%20warm%20spring%20and%20my%20rose%20bushes%20are%20in%20their%20full%20glory%20right%20now.%20%20A%20good%20pruning%20last%20winter%20resulted%20in%20lots%20of%20blooms,%20especially%20on%20my%20climbing%20roses.%20Our%20annual%20Rose%20Festival%20will%20start%20in%20several%20weeks.%20It%E2%80%99s%20a%20big%20event%20with%20a%20carnival%20center%20and%20big%20parade%20and%20if%20you%20are%20out%20this%20way%20for%20a%20visit%20you%20should%20make%20sure%20to%20attend%20some%20of%20the%20events.%20%20I%20don%E2%80%99t%20have%20a%20garden%20any%20more%20other%20than%20a%20few%20pots%20of%20herbs%20and%20tomatoes%20that%20sit%20on%20the%20patio%20off%20my%20living%20room.%20%20They%20get%20good%20sun%20and%20everything%20does%20well.%20%20There%20is%20nothing%20like%20picking%20tomatoes%20that%20are%20warm%20from%20the%20sun%20and%20eating%20them%20out%20of%20hand.%20%20It%20takes%20me%20back%20to%20my%20days%20of%20growing%20up%20on%20a%20farm.%20%20I%20found%20a%20new%20variety%20of%20cherry%20tomato,%20%E2%80%9CRapunzel%E2%80%9D,%20and%20I%E2%80%99ve%20planted%20several%20of%20them.%20%20I%20love%20what%20I%20see%20in%20the%20photo%20above%20and%20hope%20mine%20produce%20like%20the%20the%20plant%20shown.%20%20It%E2%80%99s%20worth%20a%20try.%3C/p%3E%3Cp%3EWell,%20that%E2%80%99s%20it%20for%20now.%20%20I%E2%80%99m%20going%20to%20the%20beach%20on%20Tuesday%20and%20hope%20to%20have%20some%20good%20photos%20to%20share%20when%20I%20get%20home.%20Stay%20tuned.%3C/p%3E%3Cp%3EI%20found%20this%20delicious%20recipe%20at%20White%20Lights%20on%20Wednesday.%20%20The%20only%20change%20I%20made%20was%20adding%20diced,%20dried%20apples.%3C/p%3E%3Cp%3EApple%20Oatmeal%20Cake%20%20%20%20Ingredients%20Cake:%3C/p%3E%3Cp%3E1%C2%BC%20cups%20applesauce%201%20cup%20Old%20Fashioned%20oats%20%C2%BD%20cup%20unsalted%20butter,%20softened%201%20cup%20sugar%201%20teaspoon%20vanilla%202%20eggs%20%C2%BD%20cup%20diced%20dried%20apples,%20reconstituted%20in%20%C2%BC%20cup%20warm%20water,%20apple%20juice%20or%20rum%201%C2%BD%20cups%20all-purpose%20flour%201%20teaspoon%20baking%20soda%20%C2%BD%20teaspoon%20ground%20cinnamon%20%C2%BD%20teaspoon%20ground%20nutmeg%20%C2%BC%20teaspoon%20salt%20Topping:%3C/p%3E%3Cp%3E%C2%BE%20cup%20sweetened%20flaked%20coconut%20%C2%BD%20cup%20packed%20brown%20sugar%20%E2%85%93%20cup%20chopped%20walnuts%20(or%20pecans)%20%C2%BC%20cup%20unsalted%20butter,%20melted%203%20tablespoons%20milk%20%20%20Instructions%20Cake:!%3C/p%3E%3Cp%3EIn%20a%20medium%20saucepan%20over%20medium-high%20heat,%20cook%20applesauce%20until%20just%20beginning%20to%20boil.%20Stir%20in%20oatmeal.%20Set%20aside;%20let%20stand%20for%2020%20minutes.%20Preheat%20oven%20to%20350%20degrees%20F.%20Make%20sure%20oven%20rack%20is%20at%20least%206%22%20from%20top%20of%20oven.%20Coat%20a%209%22%20x%209%22%20baking%20dish%20with%20non-stick%20cooking%20spray;%20set%20aside.%20In%20a%20medium%20bowl,%20combine%20flour,%20baking%20soda,%20cinnamon,%20nutmeg,%20and%20salt.%20Set%20aside.%20In%20a%20large%20bowl,%20cream%20together%20butter%20and%20sugar%20until%20light%20and%20fluffy,%20about%202%20minutes.%20Add%20vanilla%20and%20eggs,%20mix%20until%20combined.%20Add%20reconstituted%20diced%20apples%20and%20mix%20well.%20Add%20flour%20mixture%20to%20butter%20mixture%20in%20two%20additions;%20mix%20until%20just%20combined%20after%20each%20addition.%20Add%20applesauce%20mixture%20and%20mix%20until%20just%20combined.%20Pour%20batter%20into%20prepared%20baking%20dish.%20Bake%20for%2040%20to%2050%20minutes,%20until%20cake%20has%20browned%20and%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%20Topping:%3C/p%3E%3Cp%3EIn%20a%20small%20medium%20bowl,%20combine%20coconut,%20brown%20sugar,%20walnuts,%20melted%20butter,%20and%20milk.%20Mix%20until%20combined%20and%20all%20ingredients%20are%20moistened.%20Carefully%20spread%20topping%20over%20hot%20cake,%20and%20return%20to%20oven.%20Turn%20over%20to%20broil,%20and%20cook%201%20to%202%20minutes%20or%20until%20top%20is%20golden%20and%20bubbly.%20Remove%20cake%20from%20oven.%20Cool%2030%20minutes,%20and%20serve%20warm.%20%203.5.3208%3C/p%3E){kind=link}
